Before you make the switch, eat a lot of donuts, pretzels, artisan breads and drink plenty of microbrews. Those are the only things I miss, just not enough to go through the pain.

Cholesterol is another thing that naturally evens out during a high fat diet (Open Original Shared Link). This is serologically speaking, not dietary speaking though, you don't need to avoid dietary cholesterol.

I think it was either 2 or 4 years ago that the FDA was legally obligated to create an official gluten labeling system... They finally got around to putting together a commission on it last year, and did a consumer survey about it back in march or april of this year... You could get a decent crust out of buckwheat flour, chilled lard, a pinch of salt and some water. You can't just substitute plant fats for an animal fat if you want a fluffy product. Go bold, go lard! Personally though I wouldn't use 100% buckwheat flour, try watering it down some with milder rice flour. -

That you have type I and Hashimoto's means your odds are really good that you've got a gluten problem. It's definitely a good thing to talk to you doctors about, since you've gone this long already you should keep on your normal diet (or even eat excess gluten) till you get tested as this will make the results more reliable. I tested negative for IgA-TTg (the main celiac marker) and yet whenever I eat gluten it feels like I have shrapnel dragging through my intestines for a few days. The blood tests don't mean squat compared to how you react to a gluten-free diet. -
