ARCHIVED Should I Cook Pasta For My Family?
WheatChef replied to KeriB's topic in Coping with Celiac Disease
Might possibly have been overly dramatic there due to having coincidentally been glutened that morning from a safe meal stored in a tupperware container who's exposure to gluten was being washed in the same sink/dishwasher as heavy glutened containers/dishes (caked on). Edited. -
ARCHIVED Talk To Me About Alcohol, And About Bread Please...
WheatChef replied to Monklady123's topic in Coping with Celiac Disease
I have yet to find a suitable gluten-free bread (aside from my Gluten-free homemade banana nut bread) but as far as beer goes Green's is definitely one to check out. It's an import and priced more along the lines of a fine microbrew than the cheaper Redbridge. As far as flavor and body goes there's no comparison between the two however, Redbridge tastes like... -

and then burn them afterwards because once you put any of those into the same dishwasher as your "safe" plastic or wood items then you've potentially contaminated them too. Edit: Sorry, went a bit over the top here venting frustration of my current situation which is certainly a not properly shared kitchen. Don't mean to spread paranoia. -
ARCHIVED Does This Sound Like The Right Testing For Dh?
WheatChef replied to climbmtwhitney's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Find a new dermatologist and certainly don't let any friends go to that one. DH is a form of eczema. If your dermatologist wont test for dermatitis herpetiformis because he thinks it's a form of dermatitis (eczema) then he's completely incompetent. -
ARCHIVED Genetic Test Results
WheatChef replied to mkmom's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Technically all scientific tests have failed to actually find any elevated levels of these opioidpeptides in autistic patients so this theory is most likely bunk. Additionally there have not been found higher occurrences of celiac disease in autistic children compared to normal children, however they did find a higher incidence of elevated gliadin antibodies... -
Open Original Shared Link "...eating three or more burgers a week was associated with a higher lifetime prevalence of asthma and wheeze, particularly among children with no allergies in rich countries. A heavy meat diet, however, had no bearing on the prevalence of asthma or wheeze." Correct me if I'm wrong, but burgers are a patty of meat in between...

ARCHIVED High Fiber Lots Of Water, Sweating, And Celiac
WheatChef replied to Glutenfreenoobie's topic in Coping with Celiac Disease
You don't really need to stress the exact amount and schedule so much, the bacteria obtained from these sources can set up shop in your intestine and live for a while in your guts working their magic. Fermentation is the oldest known method of food preservation and so we as humans have been "supplementing" with these lactic acid bacteria for a very long time... -
ARCHIVED Anyone Done An Elimination Diet?
WheatChef replied to Luvbeingamommy's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Considering the recent study that found multiple forms of Millet, including the whole grain, being contaminated with gluten it would probably not be a good idea to include that into your elimination diet. -
ARCHIVED High Fiber Lots Of Water, Sweating, And Celiac
WheatChef replied to Glutenfreenoobie's topic in Coping with Celiac Disease
The bacteria that are responsible for converting milk into yogurt feed off of lactose. This means that the lactose content of yogurt is naturally lower than the milk itself which would mean it's much easier on digestion than regular dairy products would be. Your question overall is too broad, there is no specific amount of exact lactose digestion damage... -

If you think you've accidently consumed gluten, flush your system with probiotics. -
The blood tests can only tell you if you have a gluten problem, not if you don't. Your allergist was correct in the best form of "testing".

ARCHIVED Gluten Free Grains Tested Postive For Gluten
WheatChef replied to minamoo's topic in Coping with Celiac Disease
I absolutely love all coconut products. Coconut kefir is my go to drink when I want a delicious libation. -
Definitely great customer service, they stayed on the phone with my father for quite a some time while they called up separate departments to try to find out if their deli ham was safe or not (they hadn't updated their online list yet). Additionally most stores have a copy of this list at their customer service in case you have a question while in the store...

ARCHIVED Gluten Free Grains Tested Postive For Gluten
WheatChef replied to minamoo's topic in Coping with Celiac Disease
Okinowan's (sp?) eat a lot of pork and use animal fats for cooking. Mediterranean cuisines feature plenty of organ meats with ample amounts of fat and cholesterol. Yes the fat profiles of our grain fed animals are completely off balance but at this point the research points to the ratio being more important than the amounts meaning that if you are consuming... -
ARCHIVED Gluten Free Grains Tested Postive For Gluten
WheatChef replied to minamoo's topic in Coping with Celiac Disease
Consumption of cholesterol is not linked to heart disease, neither is animal fat. There were some poorly put together studies a while ago that started that whole scare which were denounced as being misleading by the alternative health movement and it wasn't until this year that mainstream journals finally started admitting studies showing the complete lack... -
ARCHIVED How Cigarette Smoke Helps Celiacs
WheatChef replied to Candy's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Technically the article doesn't say anything about nicotine, for all they know it could be the tar that has this effect. -
ARCHIVED Wanted To Share Vitamin Info
WheatChef replied to Kathleen Smith's topic in Coping with Celiac Disease
Half of the ingredients are either not needed at all or are not in their best form (even though they claim all the ingredients are). The stuff that is important for us to take during healing you can get for much cheaper if you buy individually, somewhere around half that price. -
A withdrawal period is normal for many people going gluten-free. The duration of these stronger symptoms is potentially suspect however. With those 3 food staples you should be getting enough carbs/protein/fats but you might be somewhat devoid on vitamins. If you actually do have a gluten problem then your intestines are the most efficient things until they...

ARCHIVED Gluten Free Grains Tested Postive For Gluten
WheatChef replied to minamoo's topic in Coping with Celiac Disease
Well, on the bright side they only mention one whole grain in that list while all the other's are flours which means it's most likely that the contamination is occurring during the milling process. The whole grain was Millet, so looks like that one's another thing to add to the oat list. Smith: they found 1 rice flour that had gluten in it but it was at... -
ARCHIVED Caliacs, Gluten Intolerance, Wheat Allergy Or Something Else? Help!
WheatChef replied to naiiad's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
From the sound of it you don't have good luck with doctors in your area so you may wish that factor into your decision of getting an official diagnosis that the testing process isn't exactly fool proof. Drink water to cure canker sores? The primary cause of canker sores is the immune system, whether the result of a virus or an autoimmune condition (like celiacs... -
ARCHIVED Is this all in MY head??
WheatChef replied to curiousgirl's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Holy cow, unless I'm reading that terribly incorrectly your results are greater than 100 AU! That couldn't be further from being "all in your head" it sounds more like it's all over your body! The cleansing process can be very confusing and it takes most people multiple tries to finally get totally gluten free at home. In the meantime, my special drink... -

ARCHIVED Mom Is Negative For Celiac
WheatChef replied to jasonD2's topic in Coping with Celiac Disease
Genes don't skip generations, they can't. The phenotypic expression of a gene can skip a generation easily if it is a recessive (not automatically expressed in the offspring if the other parent provides a more dominant copy) but that is not what the tests look for. It's not all that improbable that your mom's mother does have 1 copy of the gene but didn't... -
ARCHIVED Cholesterol Numbers Still Dropping
WheatChef replied to coffeetime's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
You do need cholesterol for hormonal balance and proper cellular growth but you don't need all that much. If your doctor isn't concerned about your low cholesterol you probably don't need to be either. -
ARCHIVED Oat Bran? Need A High Protein Shake.
WheatChef replied to vbecton's topic in Coping with Celiac Disease
A whole bunch of whey shake producers make cookies and cream flavors and use shared lines. There are a few hemp protein powders out there that claim to be gluten free are are supposed to have good amino acid profiles but I've never tried them myself so couldn't give you a person review of them. I just chow down on chicken turkey breast for extra protein.
