ARCHIVED Desperate For Ideas
sb2178 replied to Chrissyb's topic in Gluten-Free Recipes & Cooking Tips
Do you have a thermos? Soup and crackers. Or else hummus and vegetables. You can freeze the hummus and it will thaw in the morning. Salad-- like a vegetarian salad nicoise. If you pack a vinaigrette separately, it should be ok if you don't include things like mayo, egg or meat. -
ARCHIVED Gluten Free Diabetic
sb2178 replied to shadowedsensei's topic in Food Intolerance & Leaky Gut
Small amounts of fruits and whole grains like kasha, quinoa, and millet are also acceptable when eaten with fat and protein. Tofu, eggs and dairy are also options. If you're on a budget, seeds like sunflower seeds are generally cheaper than nuts. There are a few cookbooks that address the issues if you hav eto budget to get one or even just request it... -
ARCHIVED Igg Elisa Food Intolerance Testing...?
sb2178 replied to sb2178's topic in Coping with Celiac Disease
There are mechanisms for stopping a gene from being expressed, but I don't know of any treatments that do that for autoimmune diseases. I'm sure they are in development. Yeah, I did a pretty thorough challenge. Milk was an issue but no cheeses caused problems and milk doesn't give me any trouble any longer (which makes me wonder about the validity of... -
ARCHIVED Mark III? Recovery Time?
sb2178 replied to hh73's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Some people have problems with the PPIs (nexium). If that was a med you needed pre-celiac diagnosis, you may no longer need it and could ask your dr. about easing off it. If you showed severe gastritis or ulcers, etc., it's probably not worth asking or trying. Magnesium, folate, b-12, and zinc are also nutrients that you may be low on. Fish oil and... -
ARCHIVED Has Anyone Else Been Through This?
sb2178 replied to littlestephie's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
oh poor steph! Other ideas: -a referral to a nutritionist who works with GI patients -thoughtful supplementation -setting a weight point where they introduce some IV nutrition -acupuncture for the lungs and stress -low fiber, cooked foods only -mashing things, especially if your stomach (rather than intestines) hurts -very careful research about... -
ARCHIVED Guidance Needed From Those Who Have Been There
sb2178 replied to MrsJWells's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
If you don't want the scope, but still want more confirmation, you could ask for the EMA test and/or the genetic tests. EMA is more specific to celiac, but I think it tends to show up later in the disease. Genetics, positive blood work, and a response to diet is pretty much airtight. A scope is also not a bad idea in case you have problems recovering... -
Hello all, I'm wondering what experiences people have had with IgG ELISA testing and subsequent eliminations. I tested high for a few foods (in addition to gluten and gluten containing items), and am debating the whole elimination diet thing again. Did it in the spring, didn't particularly notice any symptoms associated with either peanuts or cow's milk...

1. I made friends with the chef in the cafe where I work for the days where I don't manage to pack food. I also keep safe food in my desk (not in the office kitchen). And I don't eat anything else at work. Ever. 2. Always, always, always wash hands before eating. Soap and hot water, NOT hand sanitizer. 3. Well... take the 5 and under crowd gluten...

ARCHIVED Skeptical, But Any Thoughts?
sb2178 replied to fallout1's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hygiene hypothesis is pretty highly regarded as probably true for many diseases. The part NOT well discussed is how the higher rates of infant mortality may affect the statistics. And, as pointed out, the environmental exposure (gluten) link is well established and exposures vary by culture. Anyway, once you have celiac, you're stuck with it. Whether... -
ARCHIVED Side Effects Of Long-Term Prilosec?
sb2178 replied to bridgetm's topic in Coping with Celiac Disease
licorice tea is also a helpful alternate for mild GERD. Just don't overdo that if your BP is on the higher side. And I also *highly* recommend trying to limit PPI use. I'm pretty sure that I also ended up with my digestive enzyme system basically turned off from them. Elevate the head of your bed too if you haven't already. Small meals, no EtOH... etc... -
ARCHIVED What's Your Favorite gluten-free "mainstream" Meal?
sb2178 replied to crimsonviolet's topic in Coping with Celiac Disease
what i'd add: dal and rice saag paneer and rice bean salads sweet potato, egg of whatever type, steamed veg spring rolls wild rice pilaf with fish and veg risotto -
Hi all, Just wanted to share a lovely experience. Started a new job in an institution of higher ed (Harvard School of Public Health) and e-mailed the chef in the cafe that serves that area of the campus about lunches. She met me today to discuss what I need to avoid and worries about contamination since about everything is served on a salad bar or hot...

ARCHIVED Just Diagnosed Last Week
sb2178 replied to cmathews03's topic in Coping with Celiac Disease
hard cider. snickers bars. ancient harvest corn quinoa pasta. (buy online in bulk, much cheaper) convert your friends to indian food and mexican (corn tortillas, nothing fried). And remember to eat! you'll never gain weight if you go take a nap instead. Yay for crazy diagnosis that do not require medications and quietly drive you crazy for... -
Yes-- and I think I finally have a "normal" cycle for the first time ever with the lovely gluten free diet (formerly light/skipping/weird intervals). No promises yet, but it's looking likely. Low body fat definitely leads to issues. Under 15-16% is generally considered to be bad for fertility, as is over... 35% (?). High activity levels are also a...

Sad to say, not much in the way of responses yet. The actual tips (beyond speaking higher on the food chain): -some places must give out a balance of foods in order to count it for funding purposes. Kinda like the school lunch. Make sure they know that you can take rice instead of bread or pasta and just weed out whatever else...? -look for a place...

Well, you're symptomatic. I'd definitely consider either a positive response to a gluten free diet or a biopsy to be diagnostic with blood work. Your pick-- the diet is annoying and irritating at first, but being symptom free is wonderful. You have to stick to it for a good while: at least three weeks and preferably for 6-12 weeks. Taking dairy out as...

ARCHIVED Osteoporosis
sb2178 replied to Wolicki's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yay! From what I've read, gluten-free diet generally means young celiac patients regain a good bit of lost bone density. Not much to read on older patients... Anyway, i'm also hoping to have a scan next year and discover that the weirdly elevated rate of loss is now either zero or positive. -
ARCHIVED Is Plain Starbucks Coffee gluten-free?
sb2178 replied to jasonD2's topic in Gluten-Free Foods, Products, Shopping & Medications
I was told this summer that all drinks had no gluten, but that's probably seasonal... they should have an answer for you though. -
ARCHIVED Bulk Flours And Pastas
sb2178 replied to MelindaLee's topic in Gluten-Free Foods, Products, Shopping & Medications
I buy ancient harvest pasta in bulk via that retailer named after a rainforest that starts with Amazo... Very much cheaper...$3.19/lb in a giant bag rather than $8.58/lb in boxes. -
Also, call the largest food bank in your state directly and ask to speak to the nutritionist on staff. Not all food banks have nutritionists/RDs but more do than they used to. S/he may be able to assist you directly or be a liason with a local source. Any place that sends full meals (like to AIDS or cancer patients) may also be a better resource and...

Yeah, I've been using foil over cookies sheets and it's easy. Eventually they will get replaced, but it's going to be a slow process for the baking equipment and supplies. And sweet potatoes; they are excellent. Make a trip to an Asian market and get some cellophane or rice noodles for occasional treats (homemade chicken noodle soup). If you can get...

ARCHIVED Breakfast Options
sb2178 replied to GlutenFreeinPanama's topic in Parents, Friends and Loved Ones of Celiacs
Arepas? Do they have those in panama? I like them with a side of black beans. Corn tortillas with cheese are pretty good too, once he can do dairy. Indian pudding (corn meal-based) or any sort of custard works too, and you could make with whatever faux milk you are already using. Any sort of pilaf is good. Can you get quinoa? Hominy is another option... -
ARCHIVED Dad Confused With 2 Diagnosis-Celiac Or Crohns
sb2178 replied to Confused-Dad-wdaughter's topic in Parents, Friends and Loved Ones of Celiacs
The most depressing answer is that she could have both. Autoimmune diseases tend to "cluster" and leaving one untreated tends to increase the risk of others, I think I read. Was any of her blood work indicative prior to the scope? Any antibodies specifically to gliadin? It's an older test, but the TTG antibodies definitely show up in both diseases... -
I was going to wait on the oats until after my first follow-up bloodwork. If for some reason, it's not back into the normal range (would be very weird as was barely elevated), I won't. If normal, I'll try them. As for taste changes: absolutely. I was already a pretty healthy eater in terms of fruit veg whole foods etc but I'll now eat some of the produce...

ARCHIVED 3 Years On, Still Sick.
sb2178 replied to up late's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'd bet you've got some sort of absorption/metabolic issue going on-- ketones are not a great thing to have excess amounts of. Maybe have them retested to see if they are still elevated? Your body typically produces them consistently when you are not consuming/digesting/absorbing carbohydrates, and nutritionally, usually indicates some form of starvation...
