Okay, potatoes are not empty calories. They aren't a great idea if you are diabetic/borderline diabetic and not that great when fried (aka potato chips and french fries = empty calories). Possible but unlikely. I'd substitute a similar food in for a month or two and see if your weight shifts. Just... Udi's cinnamon rolls do not equal oats! BTW, I tried introducing oats after clear bloodwork and seemed to find symptoms after three days of eating 1/4 to 1/3 c rolled oats, cooked in water. Twice. But, I have a relatively recent blurry... -
I've used white corn flour for a roux. Mexican seasoning: 1 T cumin, 1 T chili powder, 1/4 t ground red pepper, 1 t oregano with salt and pepper to taste That's the amount I'd use for about two cups beans.

Be sure that your doc follows up with extensive nutrient status testing. If you've ever had a stress fracture, maybe even push for bone density. Thinking... if you don't have the mental strength, you can a) develop it, probably with some isolation for a while during the adjustment period b ) get tested so you can fling that in their faces or just visit a doc or naturopath who would recommend trying the diet so you have that "officialdom" c) never, ever talk about what or why you are eating beyond vague excuses...

PB and jelly not in sandwiches can be taken away. A pre-made sandwich is acceptable. I like taking a baggie of finely cut kasha or Bob's Red Mill tasty hot cereal with almonds, raisins, cinnamon, etc added. Easily cooked in the microwave. Does he eat soups? There are all sorts of soups that can be made gluten-free. Puree it and then there will be no lumps. Everyone else can have salad too, and bread as appropriate. Would he also eat pureed/food milled meats? So, say you make broiled chicken breasts and greens beans for the family but mush it up for him. Often sweet potatoes will hide... -

migas. otherwise known as corn tortilla french toast with salsa instead of syrup. it's good with the syrup instead of the salsa too. It does sound like it, but with the fevers you may want to be sure that your doc checks you out for other autoimmune things like lupus too. Do you have the reference range for the IgA? The 0.4 is likely a different test range than we're used to seeing here. And, most beer is forbidden, but wines are generally safe as are many liquors. -

Improvement of symptoms varies. You'll probably have good days mixed in with less good days and the occasional I just screwed up day for a while. If you aren't really noticing a general improvement on some level within a month, it might be time to do some additional exploration of potential complicating factors. Any sort of vinegar, apple cider, balsamic, white wine... Combine with almonds or sesame seeds/oil! Add to spring rolls. Check which blood tests they did-- the neuro form of celiac tends to show up in AGA, which a lot of physicians don't use as a front line test any more. If they only did TTG/EMA, that would not necessarily catch it. Don't remember the references offhand, but google scholar should pull it up with good keywords. Depending on age and degree of damage, your healing process could take anywhere from 3 months (wicked fast) to 2 years (kinda slow, but not unusually slow). That's a question I've been puzzling over for a while. From the lit that I can find, false negative blood work depends very much on the lab (50% was one abhorrent lab's rating on biopsy proven, previously positive celiac patients on a gluten-based diet but it seems like 5-20% is more the norm). False negative biopsies are rarely discussed, which is frustrating... -

The most conservative gluten challenge should be 3 months, with 3-4 slices bread per day. The minimum should be for 6 weeks. There are docs who will diagnose based on symptoms, resolution with diet, return on symptoms on diet, and possibly genetics.
