If you could drink it before, I'd try grinding your own coffee from a known gluten-free brand like Peet's. Coffee tastes better freshly ground anyway. As for the milk, is Fieldcrest antibiotic or hormone free? Some people aren't sensitive to the milk itself, but to the antibiotics in it. Cows on hormones tend to be sicker and given more antibiotics... -

EPP has lots of soluble vitamins, and they've balanced the calcium, phosphate, and magnesium pretty carefully. The thing it has that's unusual is a lot of Ashmead chelates of trace elements. Older meds = lithium, possibly with depakote Lithium is a very good medicine, probably still the best we have for bipolar in people who tolerate it well. Doctors don't use it much these days because people complain about the blood draws to monitor levels. Naturopathic shrinks can be really good about that. My HMO shrinks just shook their heads and didn't know what to make of my fairly impressive recovery. Coffee is a pretty major GI irritant. Before I healed there were times I had to switch to tea for a while. I've read posts where some people have had trouble with ground coffee. It's hard to know why - the best guess is that some flavors have gluten in them and it gets on the grinder. Can you buy whole beans and grind them yourself? Also go for a darker... -

So... I thought I was OK on T4 but couldn't get back to feeling right after I had to have my dose increased again. I'm on T4 and cytomel now and it's definitely a little better than just T4. I'm glad you started this thread, as it's peoples stories here that made me willing to approach my doctor. -

I was bipolar. Gluten gave me depression, I was not diagnosed celiac and treated with SSRIs, and the SSRIs started causing manic episodes. I've been on a laundry list of psych meds including Lamictal. It didn't do much. None of the meds did much, as gluten was part of the underlying problem. I think the biggest problem is that HMOs pile too many patients on doctors. They don't have time to read and keep up on the research, and they don't have enough time to spend with patients. I totally understand the frustration as I had to diagnose myself after many years of unexplained illness.

Your doctor is an idiot. GlutenEase and all the other DPP-IV products are a complete scam. DPP-IV only removes prolines from the end of peptides, it doesn't cleave ones in the middle like on gliadin peptide. If you don't react noticeably to gluten, just take reasonable caution and you will be fine. -

As far as I know, oats are generally unsafe. They are too likely to be CC with a fair amount of wheat from wheat growing in the oat fields, grain elevators, and trucks. Sorry you're feeling so sick. I hope the pain au chocolat was good, although it probably hardly feels worth the trade-off for feeling so sick. As well as the B12 Raven suggested be sure you are eating healthy fats, and getting enough vitamin D and other B vitamins like thiamine and niacin. Your nervous system needs them to repair the damage. Lecithin (from egg yolks or soy) and omega-3 are particularly important. Don't try to eat a "low fat" style diet as you will starve your nervous system. -
There is medical data where they fed celiacs 50 ppm gluten and did biopsies and there was no damage. They've even tested celiacs eating 200 ppm Codex wheat starch breads and some were perfectly fine. I felt funny drinking Redbreast. It's the only whiskey I've tried that didn't sit well. It's pot whiskey and a little different from Scotch. As I think about it, that could have been a yeast reaction as I've been struggling with candida lately. -

Some people go through a bit of withdrawal when they go off gluten. Hang in there for a bit! As far as villous damage, it depends on how bad it was. The process is generally a few months for mild damage out to 2-5 years for total atrophy. -

Eating what you can tolerate should be OK. By the way, has your thyroid been tested? Also be sure your multivitamin has zinc, selenium, and panthenol. Deficiencies in any of those three can make hair fall out. (Been there, done that.) -

I do not worry about "shared facility" food as it's unusual for big food manufacturing plants to not have gluten somewhere.
