Yes, they are. There is a trace of wheat-based flavoring used in processing that McDonalds does disclose, but when the finished fries are tested independently there is no detectable gluten on the most sensitive assays. Chick-Fil-A is good, and some Burger King restaurants have a dedicated fryer for their french fries. You have to ask every time, though...

I think they feed you fructose and do a hydrogen breath test, but I'm really not sure. As with any intolerance, response to the diet is the strongest evidence! If you're in the US, you might even have a hard time finding a doctor who has heard of fructose malabsorption. You should ask on that Yahoo group. I'm very glad to hear you're feeling better... -

If you got the Biocard test it is supposed to be quite good, but all the celiac blood tests do have an estimated 20% false negative. It also only works if you have normal IgA. I got the full Hashimoto's diagnosis three years after going gluten-free. This spring, going on 5 years gluten-free, my thyroid levels took another completely unexplained nosedive and I'm still trying to feel well again. -

Common sense applies here. Things without cracks or a porous surface that can retain gluten are perfectly safe, including utensils, knives, plain metal pots and pans, and dishes. Basically, if you can scrub it clean you're good to go. Get rid of anything that's chipped or cracked (the bacteria cracks can harbor are a bigger issue than gluten). I'm... -

I'm confused. Why are you gluten challenging when your doctor told you that you were latent celiac? Did he explain that celiac disease is progressive and the more gluten you expose yourself to, the worse the autoimmunity can become? Get off the stuff and get well again. My symptoms used to be all over the place. I had to go on a full elimination diet because it was so confusing. I react differently to wheat and rye, and I also had a lot of trouble with rich foods. I think your whole system just gets more reactive and it becomes a matter of what you eat with the gluten. I hope you get the results you're looking for... -

Celiac disease causes thin tooth enamel. You inherited your mom's celiac and got the bad teeth because of it. My mom and I have bad teeth too. Mom is DQ2 and gluten intolerant. I suspect I'm actually celiac, though I don't know for sure. -

You really are allergic to these things you're reacting to, in the sense that your body is making sets of antibodies to them. The only things gliadin antibodies have been documented to cross-react to are casein and aveenin (oat protein). I'm wondering about Myalgic Encephalomyelitis (ME) because of your overwhelming fatigue and pain. The disease is neurological and can appear MS-like. It starts with a viral encephalitis infection, so your post-op headache/virus really makes me wonder. Thing is, I think there is damage on MRI. Still worth a look. It was really sporadic for me. Also, I found I reacted worse to fatty meals. Toast wouldn't cause me nearly the trouble as steak pies with chips. Again, that lunch with the crisps and mars bar also would have had me queasy while meatballs and toast wouldn't be as bad. Lager has gluten in it as well, and alcohol and carbonation are not easy on upset stomachs... -
Corn is a major allergen and there are plenty of people who are sensitive or intolerant to it. Some people find they have more problems with GMO corn. You might try organic corn chips and see if you still react.
