  3. If you are celiac, your body has been systematically destroying your intestines for years. These sorts of things don't resolve in just a week. I would suggest you switch to hard-boiled eggs for protein and see if getting completely away from dairy helps. You could also consider tempeh, but a lot of us have issues with soy too.
  4. I notice from your signature that you are vegan. Plant foods have very little pre-formed vitamin A (retinol) and are completely lacking the related retinoids. Not everyone can convert beta-carotene to vitamin A very well. Vegan diets also lack vitamin D3, and not everyone can convert enough D2 to D3, especially in the wintertime without sunlight.   5. I think you need the advice of a pediatric endocrinologist. Proper thyroid levels are terribly important in growing kids. I wouldn't wait a year to at least talk to an expert if you can get referred. You might consider supplementing selenium.   7. Focus on what you can eat, not what you can't. Shop the outside of the grocery store, where all the nice produce is, the meat and fish, and the eggs and dairy.   20. Remove giblets??? Send 'em to me! Giblets give great flavor to broth. So does the neck. When you throw the bones back in to simmer, add a little apple cider vinegar. The acid will leach calcium and minerals out of the bones and make the broth even more nutritious.

It can be a big problem for celiacs, plus if you're digesting poorly opiate-like peptides from dairy can get across your gut and mess with your immune system.
