ARCHIVED Paleolithic Diet - Anybody Tried?
knittingmonkey replied to motif's topic in Coping with Celiac Disease
I'm heading this way, easing into it. I'm sure it's good for us celiacs to examine why we want to eat a different version of the foods that got us into so much trouble to begin with. I look at gluten-free labels in the market and don't want to eat any of it. I still eat a little dairy, but it's raw dairy primarily, a serving of potatoes once a week, rice... -

knittingmonkey replied to GlutenFreeManna's topic in Coping with Celiac Disease
Or a straw! I sipped on my Honey's soda yesterday and regret it today. -
Two words: Shower down.

ARCHIVED Newly Gluten Free And Depression
knittingmonkey replied to Coinkey's topic in Related Issues & Disorders
While I read this, things started to make sense for me. Years ago, I went on a diet prescribed by my doctor in order to lose weight. Looking back, the diet was gluten-free and very simple: Yogurt and fruit for breakfast, green salad with tuna or salmon and oil-free vinegrette dressing -
ARCHIVED New To Gluten-free...whats Your Typical Diet?
knittingmonkey replied to Metoo's topic in Coping with Celiac Disease
Labelling products "Gluten-free" is voluntary at this point (in the U.S.A.) So many lunch meats are gluten-free but aren't labelled that way. Get familiar with the names of additives in which gluten is found, and read the labels, or buy a fresh piece of meat and cut your own lunch meat. -
ARCHIVED New To Gluten-free...whats Your Typical Diet?
knittingmonkey replied to Metoo's topic in Coping with Celiac Disease
Breakfast for me is most often yogurt or cottage cheese with fruit, sometimes I throw in chopped, fresh basil or some powdered ginger. Boiled eggs and fruit is good too. Sundays breakfast is eggs over medium, bacon and fried, fresh potatoes or fruit. Snacks are often nuts, but celery/carrot sticks with homemade buttermilk dressing are nice too. I'm... -
ARCHIVED Is It Too Late For Recovery
knittingmonkey replied to suebright's topic in Coping with Celiac Disease
I'm 53, diagnosed celiac on 4/30, after at least five years of discomfort. I'm grateful it seems we found the problem and am working diligently om healing. Have embraced the Gluten-free lifestyle -
ARCHIVED Can I Touch Gluten Containing Ingredients While Baking For Others?
knittingmonkey replied to Spudz's topic in Gluten-Free Recipes & Cooking Tips
After having given it some thought, I decided that even if I could shower immediately after, I would not do any work whatsoever with wheat flour. It becomes airborn -
Are M&Ms Gluten Free?
knittingmonkey replied to Grace'smom's topic in Parents, Friends and Loved Ones of Celiacs
So glad to know this! M&Ms are my weakness. Been strong so far, but never know how long it's going to last. -
ARCHIVED Can I Decontaminate My Cooking Utensils With Alcohol?
knittingmonkey replied to jackay's topic in Gluten-Free Recipes & Cooking Tips
I was talking with a friend who is a luthier just a few days ago, and somehow the subject of dissolving glue came about. He told me when a luthier wants to re-glue an instrument for repair, that they dissolve the first gluing by applying fresh pineapple juice. Then we moved onto how gelatine won't set with fresh pineapple or ginger in the mix, because their... -
ARCHIVED I'm On My Way To Hospital.
knittingmonkey replied to conniebky's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
A friend made us "gluten-free" pulled pork with Sweet Baby Ray's, but I was suspicious, so I faked like I ate it. (Some of us celiacs have to make sure something is safe before it passes our lips.) The next day, when I was in the store I read the labels of a couple of the different flavors of Sweet Baby Ray's, seeing there were ingredients I recognized as... -
ARCHIVED The Anxiety Merry-Go-Round
knittingmonkey replied to quincy's topic in Coping with Celiac Disease
Your replies are full of advice for nutritional supplements, and I'm inclined to agree that they would be very suitable for your situtaion. However, which one(s) should you take? One can't answer that definitively without knowing more about you. I can tell you that I had great success with supplements after reading Julia Ross's book: The Mood Cure. She really... -
Fermented cabbage, carrots, beets, cucumbers, coconut meat and chutney are all under my belt now. They're fantastic foods! I make coconut milk kefir, and kombucha too. And it's all so easy! You are going to have so much fun making visits to all your jars and crocks with neat stuff in them. My favorite fermented cabbage is cortidas, the Latin American sauerkraut...

Once you open the bag of flax seed meal, keep it refridgerated, as it goes rancid quickly at room temp. You really don't want rancid flax seed meal!

ARCHIVED Weight Issues And So On
knittingmonkey replied to misslexi's topic in Related Issues & Disorders
Teresa Tapp is an excellent exercise physiologist. She has DVDs and videos available for her workouts. Her workouts are short in duration but very effective, and she has specific exercises for spot reduction. Because of scoliosis and a subluxated rib with depression due to the chronic pain, I didn't feel like exercising, so to start out again I chose her... -
ARCHIVED Celiacs And Anxiety
knittingmonkey replied to dantefishell's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I suppose I've been suffering with separation anxiety for about 5 years. Started having trouble at work with concentration, dreading the 20 mile commute, ultimately I lost my job, so now I'm home alone most of the day. I just haven't wanted to make any social overtures. Now since I've been diagnosed celiac last month I'm wondering just how much celiac has... -
ARCHIVED Deviled Eggs

Watch the paprika, I've read that unless it's labeled "organic" it's often been mixed with wheat-based stablizers. If you buy McCormicks single spices they are 100% pure, so look for dry mustard from McCormicks too. Here's a note I found regarding McCormick spices and their commitment to label any kind of gluten: Open Original Shared Link -
ARCHIVED Supplement Daily Allowances
knittingmonkey replied to conniebky's topic in Coping with Celiac Disease
Here's a website that can answer your magnesium question. I use their Magnesium Gel w/Seaweed, they have by far the best magnesium supplements I've ever used. If you get too much magnesium, your BMs will get loose, then you need to back off. But of course that is if your BMs have become "normal" since you started gluten-free. -
ARCHIVED Completely Grain Free
knittingmonkey replied to farmwife67's topic in Coping with Celiac Disease
I like to use different herbs and spices in my dinner meals, maybe thicken a stew with arrowroot instead of corn starch. I like to vary how I cook meals too; sometimes slow-cooking soups and stews, other times broiling shrimp or steak and eating it with a really big salad. Try preparing vegetables that are from another culture, like jicama, jerusalem artichokes... -
Thanks for bringing this subject up. I often travel on Amtrak and am newly diagnosed celiac (4/30/10) I hadn't thought about what I was going to eat on the train.

It has got me wondering are there other supplements not suitable for autoimmune diseases? Thanks Lisa -
ARCHIVED Need Vitamin Brand Suggestions
knittingmonkey replied to Kathleen Smith's topic in Coping with Celiac Disease
I like Now brand Daily Balance. -
I'm celiac, with no DH. My good friend is celiac with DH and G.I. issues. A celiac can have DH without G.I. issues. One thing I've heard for sure, DH is always indicative of celiac whether or not they have G.I. issues.

ARCHIVED Since Going Gluten Free....
knittingmonkey replied to pues's topic in Coping with Celiac Disease
In the three weeks since being diagnosed celiac and starting my gluten-free life I have lost two very embarrassing G.I. symptoms, have more energy, have more hope, AND have lost a bit of the bloat over the upper abdomin. (Been CCed at least twice.) -
