  1. I think I may be developing a mild corn intolerance. Lately I have noticed I have heartburn after I eat corn items--mostly corn chips or corn tortillas. Sometimes it is so bad I cough until I cough up what I have just eaten. It only seems to happen if I eat large amounts of corn like corn chips or multple sources of corn in one days (tacos, corn bread...

    ARCHIVED #*@($ !#*^% Doctor!

Get a new dr. While she sounds like she is acting sympathethic while you are there it is clear there is a disconnect somewhere. Communication involves both listening AND talking. Clearly she has failed the talking portion where she should be explaining to you the diagnosis she is giving, the additional testing that needs to be done and what course of action...
  3. Sorry for your food issues. I tried to be a vegetarian for about 4 years and I was so sick all the time. it really sound slike your diet is not safe if you cannot find ways to get more protein. It may be time to re-evaluate your reasons for being vegan. If they are because of the treatment of animals would you consider humanely raised organic animals...
  4. I guess you could always do that and just ask to meet for drinks in the evening or coffee if meeting in the afternoon. I don't see why that would be bad if handled in the right way.
  5. Is this job something that would require you to eat out a lot? Like would you have to take clients out to lunch or something? I think I would scheduela late "lunch" interview like at 1 or 2 PM then order only a salad with no croutons, with olive oil and lemon on the side. But I wouldn't eat it. hardlya bite. Get yourself something to eat beforore hand...
  6. I don't have any tried an true freezer recipes but I was searching for something else recently and came across an interesting website that has a Once a Month Cooking (OAMC) menu for gluten free and dairy free meals. This seems to be the first month she has done this. At the very least it might give you some new ideas for thigns to try or you could use her...
  7. As long as you are having a colonoscopy anyway, you could ask them to do an endoscopy with biopies to test for villi damage. A colonoscopy will not test for celiac, so you would need the endoscopy with multiple biopies. A coloscopy will not test for celaic. Many people do have both of these procedures scheduled at the same time for convienence and to be...
  8. It could be withdrawal symptoms or it could be that you are intolerant to something else that your are eating more of now that you are gluten free. You might want to keep a food and symptom journal to see if you can pinpoint any common foods that you eat before the migraine shows up. Keep in mind that there can be a delay of up to a couple days after eatign...
  9. That is a very interesting recipe. Thanks for sharing! I have to admit it's early in the morning for me and I thought this thread title said "best pancakes". Pancakes are my favorite meal so I'm always lookign for new recipes. This is a pleasant surprise however. I have been looking for some new foods to try. I don't think I have ever eaten a beet...
  10. Welcome to the board! If you were gluten free for 2 months prior to the blood test then you probably got a false negative on the testing. If you have not yet told you mom the details of your tests you need not tell her it was negative. You can simply tell her the doctor looked at your test results and looked at your symptoms and diagnosed you with celiac...
  11. This thread is interesting to read. The only person I have ever known with crohns told me there was no way to help the symptoms with dietary changes and they would not even entertain the idea. So I never really looked into it or anything. This person was on very strong medicines and still in pain most of the time. I wish they would have at least looked...
  12. I have seen the movie, although it has been a long time. I do remember the final outcome of that film however was that Tom Cruise's character (the Rain Man's brother) had to leave his brother in the assisted living home (or whatever it is called) where he could get the most help. He learned that even though he wanted to take care of his brother for the...
  13. I agree with everyone else. Try giving him REAL food, not the prepackaged gluten free substitutes. I would be doing the same thing as your son if you were trying to feed me that stuff. Prepackaged gluten-free mac and cheese is disgusting. Cookies and other gluten-free baked things do taste different and have a different texture. Give him things that...
  14. I've had a hard time finding a good scone recipe so I will be watchign this topic. I was going to suggest perhaps you could make something that is mostly naturally gluten-free anyway--like mini cheesecake bites or mini custards (or flan?) or mini quiches. With those types of things you only have to worry about a gluten-free crust and if the main part...
  15. The last time that I checked El Pollo loco's chicken was NOT gluten free. It sounds like you got glutened from it. Sorry you're sick now. If you didn't ask any questions that was mistake number one. You can't go by what "looks safe". You'll learn in time how to eat out at some places safely. El Pollo Loco is not one I would risk, personally--even their...
  16. You might also consider the milk or the oil you used (if you use those for both the bread and the muffins--I know Pamela's mixes have milk in them). Soy (i.e. Vegetable oil) makes me swell and milk did too before I was seriously allergic to it (now it makes my throat swell shut instead).
  17. Actually, recipes can change dramatically by using different subs and sometimes they don't work at all. I have one recipe that I improvise by using almond milk or coconut milk in place of the regular milk. The texture is completely different depending upon which milk I use (coconut or almond). I have given up using most cookbooks for gluten-free stuff...
  18. I think the flaw in your thinking is you are thinking about it as if the testing is perfect and able to see the slightest amount of damage. However the reality is that the testing is not very good yet and can easily miss damage that is patchy (when talking about the biopsy). You have 20 ft of intestines and the biospy cannot reach every inch of it. So...
  19. You might want to add some carbs to that. How about some rice or sweet potatoes? Rice cakes with peanut butter usually agree with my stomach when I'm feeling nauseus. I know for me I find just eating protein or veggies alone makes me a little queasy, but when I pair them with some rice or something I feel better. Everyone is different however. Be sure...
  20. As of right now it is voluntary for companies to even disclose whether something is made on shared equipment or a shared facility. It is not required for them to even put that information on the package. The difference between those two Quinoas may be nothign or it may mean that the gluten free company does testing to make it a "certified gluten-free...
  21. It sounds like you are still getting some accidental gluten somewhere. If I get even a little gluten I am down for at least a week (longer if it is a large amount). What are you typically eating? have you taken all the needed precautions to eliminate cc at home? Like having a dedicated toaster, new cutting boards, new wooden spoons, new colander, etc...
  22. You're welcome! Welcome to the board! I am not 100% pain free but I would say proably 95%. I hurt after exercising even with stretching but I am really pushing myself to do more and more. I have been slowly regaining my muscle and that is what hurts. I was so weak before. I know some people on the board that were bedridden went through physical therapy...
  23. Hi, I have been gluten free for 1 year 5 months. Before going gluten free I was bedridden with pain. I also had unexplained seizures/faintign and I was ordered not to drive by my dr. At least a year of my life is a blur in my memory because about all I did was sleep or stay in bed in pain. My hair was failing out, I had dark circles around my eyes...
  24. I agree! Doesn't KFC bread their chicken there? There's got to be flour everwhere! And Taco Bell puts wheat in their meat. I'm not sure much would be safe there.
  25. Sorry to hear about your antibodies being high Just curious, have you actually looked at the ingredients in the ricotta? What ingredient could be hiding gluten? If you haven't looked at the ingredients, well it's just my opinion but I don't think it's smart to depend on lists. Ingredients change or lists can be wrong.
