So true! I've been to Italy about 11 or 12 times (still not enough - will be there again October) and have only been there gluten-free once. But it was far easier there than here! It is mandatory there to get tested for celiac disease by the age of 5 so they are very knowledgable. Cannot wait to move to Europe for soooooo many reasons. I LOVE EUROPE... -

There are others on this board who are in the same boat as me. Actually, according to many studies and celiac specialists about half of those diagnosed with celiac disease have no gut symptoms! My villi were flattened in all the biopsies. My doctors believe I likely have had it for many years according to the extent of the damage. My bloodwork was positive... -

Ensure it is not safflower you are getting - it looks similar to saffron but is a very poor imitation (i.e. it would definitely turn a person off if s/he thought it was saffron). Nearly all weddings out here in the rural areas are catered by the farm and/or church women of that community which usually means perogies, cabbage rolls, buns, chicken and gravy, etc. Sadly I have not heard of any that have any clue about celiac disease. City weddings here would likely be a different story as caterers have guidelines. Not to stereotype... -

I was gluten free for five months proir to my three month gluten challenge but I do not become obviously ill eating gluten so it was simple (and enjoyable!) for me. Had to fast for bloodwork so had a late breakfast. But it was worth the wait - Eggs Benedict! I have not had that for awhile. I used gorgeous fresh farm eggs, local ham, a gluten-free bagel and made delicious hollandaise. -
