The almond cake sounds yummy, but I have a couple of questions. First of all, grams.... I thought that was a weight. ? Do I weigh my ingredients? or measure them like in a measuring cup? My measuring cup has "ml" on it, not "g", so I guess not. And the "self-raising flour" -- I've never seen self-rising gluten-free flour. What did you use? and then... -
Yep, just go gluten-free and if you feel better then that's your "diagnosis". I've opted not to have the endoscopy because I don't want to go through several months of eating gluten every day. For me it's simple -- if I eat gluten I feel awful, if I don't then I feel good.

We always eat cinnamon rolls on Christmas morning also, so I was *just* looking up a recipe in the cookbook I just bought -- and then I came here and read this thread. As someone else said, there are good reasons not to do the endoscopy. For me it's the misery I'd have to go through while eating gluten for several MONTHS before the test. Takala, that's very interesting, thanks! I think the best thing would be for me to make my own cheesecake! It can't be too difficult I wouldn't think. Then I wouldn't have any additives at all. In fact, I might do that but still use this Kinnikinnick crust which definitely says gluten-free. It's worth a try, since I love cheesecake. -

It's Kinnikinnick brand of graham cracker crumbs. There's a whole bunch of stuff in there but the first ingredient is "pea starch" and further down is "pea protein". Thanks for the replies. Good to know about the modified food starch always being safe unless it specifically says "wheat". It could have just been the richness of the cheesecake. So far the lactaid pills have worked fine but that's just been for a smallish bowl of cereal in the morning. Maybe the cheesecake just overloaded it. Well, we'll see..... -
Utz are my favorite chip, and it says right on the package "this is a gluten-free food". I've never had any trouble. Also don't forget about corn chips such as Fritos. fritos =

I like the Glutino cereal bars. I buy mine at Whole Foods. They're the most like a gluteny cereal bar, like Neutragrains (spelling?). Also the Natural Valley honey nut ones are good, but they're not a cereal bar, but are more like a granola bar. I eat them both, depending on my mood.

My doctor says she wants me to have the endoscopy "so we can be sure." Okay, but... why? I am now totally gluten-free and feeling fine! If I have a bite of gluten I feel bad. Therefore, I am sure! Tictax, I did try almond milk (mentioned in my original post). Too thick. -- Hemp milk... haven't seen that one. But, as long as the lactase supplements work I think I'll stick with those, because all these other alternatives are more expensive than cow's milk. Plus, this way I just have to buy one thing for the whole family, and I can keep the pills... -
