  1. I've had a similar test and rice and corn was deemed OK for me. But I do notice that if I eat those everyday for a few days I will feel lethargic. I think my system does better with little or no grains. But since I do have a tolerance for them, I include them for variety, just not everyday, and never two meals in a row.
  2. First of all, welcome to the forum. There's a lot of knowledgeable people here so check back frequently. It's my go to place when I need info or insight. Yes, I blood tested negative and biopsy was fine, so I was told no Celiac - but 6 months later I had the alternate stool test and there were definitely antibodies present, which means my body sees gluten...
  3. I feel great on Paleo now, even if I sneak in a bit of rice or even corn here or there. But I recall trying this a few years ago, before getting the gluten out of my system and I always felt horrible after a few days and I'd stop. Looking back, I suspect it's because I was probably instigating gluten withdrawal, which I did have when I went gluten free...
  4. I think I must be a strange case. Last year I tested postitive to gluten antibodies, and felt much better removing all traces from my diet. But about 6 months PRIOR to that, I did have a biopsy and was celiac negative, blood was negative, with everything looking fine with villi (my symptoms were not intestinal at the time, only neurological, and it...
  5. I know exactly what you're talking about. That feeling like I could just "blink out" at any moment was my biggest symptom prior to going gluten free. Very scary, especially since no doctor could tell me why. Turns out, for me it wasn't just gluten it was also dairy and soy. But once I cleared them from my system I was clearer thinking and feeling than...
  6. I know how miserable she must feel. Not sure how old she is but at any age, nausea can really impact your quality of life. I think the worst part of all this for me is not knowing what's causing it. The first thing that came to mind when I read yours was soy. 15 months ago, I didn't chuck all my "gluten symptoms" until I totally removed that from my...
  7. Thank you! Thank you! Thank You!!!!
  8. That's the first thing I thought of too! Turn this to your advantage! Who knows, you may wind up being the next Food Network star of allergy free cooking!! Put some videos on YouTube! Or perhaps you could be a personal chef to someone who is wealthy and gluten intolerant. Gluten free requests are on the rise. Perhaps a restaurant would need a dedicated...
  9. Lays are supposed to be gluten free too but now I am reading about their manufacture on shared lines. I was eating them quite frequently for awhile and maybe the slight cc was getting to me. Oh well, I guess I'll just learn to make my own when I feel like I really want them!
  10. Thanks! Never suspected before now and I think you are right about the cc issue. Very good to know.
  11. I'm searching for what others' experiences are with Lays regular, Wavy and Ruffles potato chips. I've been sick lately and never suspected the Lays being cross contaminated because I ate them for 15 months with no trouble. Still not 100% sure of the culprit but it helps to feel like I'm making progress. I know I can't eat the Stax because of the soy...
  12. I have a quick question: if potato chips ingredients list that they are cooked in peanut or cottonseed or corn oil, might there be soy in that somehow? I'm trying to figure out what is making me feel badly lately and following up on all clues. I never suspected potato chips (Lays) up to now. If they do not list soybean oil or something soy-similar on...
  13. Just be prepared that some GI's out there are dubious that you can experience withdrawal symptoms from removing gluten from your diet, I've had more than one doctor tell me there's no such thing. My own experience and what I read on this forum would be enough to convince me otherwise. Some people don't experience much of a detox at all, others have stronger...
  14. I eliminated gluten first and then about a week later eliminated dairy and soy. Within a week of that I went through what you did, including one especially scary night when I awoke nauseous, dizzy to where I couldn't walk with severe anxiety and shaking. I've never really had something like that happen to me and I thought I was a goner. The worst of it...
  15. I've been at this now for about 15 months - gluten-free/DF/SF, non celiac (by blood and biopsy) but gluten intolerant (Enterolab). In the past 6 weeks I've noticed that my system has changed. I was feeling GREAT for over a year and then I started with nausea at times, always after I eat no matter what I eat, even though sometimes I eat very little and still...
  16. I did my first casein challenge a couple weeks ago after being 15 months gluten-free/DF/SF. It was only about 1/4 cup of mozzarella cheese on gluten free pizza. Prior to going gluten-free/DF/SF, that amount of casein would make the room spin within minutes and I'd be brain foggy for days. And while I can't say I wasn't without reaction - about 10 minutes...
  17. I'm with Rice Guy here - I haven't used any cookware with teflon or other chemical based non-stick coating for over ten years, long before I had to go gluten free, ever since I read about one minute scratch and the toxin slowly and systematically releases into your food. There are enough toxins around that are hard to avoid but this is something I can control...
  18. My symptoms are almost all neuro but things didn't clear up entirely until I removed dairy and soy from my diet. It's been about 15 months of being strictly gluten-free/DF/SF and I did a mozzarella cheese challenge for the first time just last weekend and still got a little dizzy within 10 minutes - although not as bad as before. I have no plans to reintroduce...
  19. I like the ENJOY LIFE brand of chocolate chips - I think they make other chocolate products too. They are gluten-free/DF/SF.
  20. Even if bloodwork and biopsies come back negative for Celiac, it doesn't necessarily mean that your body does not react to gluten. My bloodwork/biopsy was negative for Celiac. Yet other testing showed beyond any doubt that my body produces antibodies to gluten, which means my body sees it as a foreign invader. Not sure why gluten decided to attack me neurologically...

ARCHIVED Saw My New Pcp Today..

I know it's a pain to switch doctors, but totally agree with the thinking that you should find a better fit for PCP. Life is too short and there's too much to lose by relying on the advise of someone who is so ill-informed. Celiac or not, her attitude about a simple soy food intolerance is downright scary.
  22. My relief wasn't immediate but it did come. I went through a period of withdrawal at first. I think it took a few months to really start feeling great, but that was only after I also eliminated dairy and soy. Many have the same intolerance to those two additional items - at least at first, or even other food groups such as nightshade vegetables, etc. ...
  23. I laugh too at those milk commercials. I'm one who has tested negative to lactose, but positive to casein intolerance. And it gives me the same neuro symptoms as gluten (dizzy/weird in minutes) but with the added fun of stomach cramping (which for gluten - not so much). Soy does the same but just the dizzy thing. It's time for me to do a casein challenge...
  24. I couldn't tolerate wine again until about 8 months into it - maybe sooner. Now I'm good as long as I don't overindulge. Totally agree about the wine additives. I was bummed too at first thinking I couldn't have wine, and ready to make a special purchase to try sulfite free wine. I remember during a (pre-gluten free) trip to Italy a few years back, I...
  25. I am wondering if this is much more than angst over gluten. I'm not there and I don't know all the back story. Ironically enough, your decision as to whether you can attend with good wishes must come from what makes you feel good in your gut.
