ARCHIVED Those Of You Who Were Once Lactose Intolerant
kwylee replied to Newtoitall's topic in Coping with Celiac Disease
Testing indicates that I can't tolerate casein (although lactose is OK) and I'd be interested to know what the experience of others are in this regard. My readings on this forum seem to indicate a more favorable outcome for those who are lactose intolerant, that they seem to be able to reintroduce that into their diets, but I'd love to be wrong, that it... -
ARCHIVED My Friend Is Coeliac, What If She Decides To Eat A Piece Of Cake?
kwylee replied to kellynolan82's topic in Coping with Celiac Disease
I'd have to first wonder what prompted her to remove gluten from her diet in the first place; not that I disagree with the notion - I'm one who really believes that gluten is probably harmful in some way to most humans. If her body does not tolerate gluten for whatever reason, then she is doing harm each time she ingests. I don't know what would happen... -
Makes so much sense to me that this would be a symptom, i.e., anxiety, panic attacks, altered brain response. I've always been a fairly confident person but I went through a phase where I was apprehensive of everything before stumbling on the gluten connection. You're on the right path.

My blood tests through doctor were negative but other testing showed genetically intolerant to gluten. So not sure how much I'd trust an off the shelf test anyway. The best test is still giving up gluten, whether it confirms celiac or non celiac gluten intolerance, or whatever they'll call it in 10 years (after the dust settles).

I checked a little less than a year ago online and found many sites saying all Dior lip products were gluten free and I've not had any problems, but you may want to check with the company directly. You mentioned lip gloss that was a couple years old, you may want to consider pitching it, gluten or no. Bacteria builds up so easy on eye and lip products...

This is one of those scenarios where the behavior of another supposedly intelligent human is so ludicrous, it precludes conjuring any emotion toward them, especially the particularly wasteful drain of anger. Truly rude for someone to chomp on a burrito (even a gluten free one) during a lecture. Talk about crumbs of irony contaminating those fateful business...

ARCHIVED Brain Fog
kwylee replied to jay88's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Dairy (casein) affects me just as badly as gluten and soy. My symptoms were mostly neuro, and the brain fog that I had for years lifted entirely after a few weeks free of those things. -
ARCHIVED Losing Friends Because Of My Food Restrictions
kwylee replied to GlutenFreeManna's topic in Coping with Celiac Disease
Small consolation I know, and I acknowledge this is something your mom would say to you, but, was this really a true friend????? I think not. And here's a big hug, sweetie! -
You made me think and I had to smile: Wasn't it the late great George Carlin who coined the phrase, "...silent but deadly"? I wonder if he was gluten intolerant!!
-
Public service position or not, that's just ridiculous that you are excluded, and you're not even asking for any special food accomodation!!! One of the problems is that gluten sensitivity is so seemingly silent to others around the sufferer, with symptoms for many being episodes you'd rather undergo in private. So, if you're not immediately projectile...

I feel best when I am in control of what I eat, so it would make me uncomfortable for others to provide an alternative treat for me. That being said, I can feel the angst in your post, and I do undertand completely that it hurts to be left out. I manage a number of employees. I would much rather someone approach me calmly, explain what is on their...

ARCHIVED Questions, Questions, Question!
kwylee replied to staci002's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
First, I'm so excited for you that you discovered what was ailing you. It was a wonderful day for me too when I finally got an answer. I am non-celiac but definitely gluten sensitive, and I think a good number of people fall into this category. Removing gluten has been the best thing I've ever done for my health. No more fatigue, no more brain fog, no... -
ARCHIVED Is It Possible To Have Gluten Reactions Without Celiacs?
kwylee replied to meggo623's topic in Coping with Celiac Disease
I have tested genetically intolerant to gluten, however all testing for Celiac disease shows no sign of it. I think it is important to note that in my case, my symptoms were mostly neurological. My body produces antibodies to fight the invader gluten if ingested. I do not have Celiac disease. But I will always react to gluten, so I do not eat it. ... -
ARCHIVED Controversial Facebook Post By Chef
kwylee replied to idonteatwheat's topic in Gluten-Free Restaurants
I think the responsibility still clearly lies with the restaurant and their employee. If the restaurant owner is dedicated on a go forward to providing gluten free menu items, and performing the same due diligence as would any other restaurant with good intentions in this regard, then good word will get around in the same way the bad word made its way... -
ARCHIVED Gluten Free And Still Have Werid Symptoms
kwylee replied to chili's topic in Coping with Celiac Disease
For the butter replacement you might try Purity Farms ghee. It's butter w/o the milk solids and that brand is certified casein free. Ghee is actually healthy for you. For that sushi, you might experiment with alternative fresh sauces. When I want something for dipping, I combine apple cider vinegar (or saki), a bit of ketchup, a touch of molasses, some... -
ARCHIVED Gluten Free And Still Have Werid Symptoms
kwylee replied to chili's topic in Coping with Celiac Disease
I know it seems overwhelming, but it gets easier - and yep! casein and soy elimination may really be temporary. When I did this, I hit the internet where casein facts abound, and I read those labels. Of course milk, and yes, cheese (sorry) are big casein offenders, but so are things like ice cream, sour cream and butter (the latter makes my head spin... -
ARCHIVED Gluten Free And Still Have Werid Symptoms
kwylee replied to chili's topic in Coping with Celiac Disease
I didn't start feeling "clear" in the head and strong in the knees, until I removed casein and soy in addition to gluten. -

ARCHIVED Controversial Facebook Post By Chef
kwylee replied to idonteatwheat's topic in Gluten-Free Restaurants
Search up in this thread, I think someone posted a screen shot of his Facebook page. But I've also seen screen shots on others' blogs. It's out there, and it's not going away. -
ARCHIVED What's Your Favorite Coffee?
kwylee replied to CarolinaKip's topic in Introduce Yourself / Share Stuff
I'm from the deep south, a suburb of New Orleans. Down here most of us drink coffee and chicory. It's what they serve at the Cafe DuMonde down in the french quarter, and some say at first it tastes pretty strong but actually the herb, chicory, has no caffiene in it, so including the herb may actually lessen the caffeine content in the same cup of coffee... -
ARCHIVED Controversial Facebook Post By Chef
kwylee replied to idonteatwheat's topic in Gluten-Free Restaurants
If he is still working as a chef he needs to be fired, immediately. And if he is a restaurant owner, he needs to be put out of business. That will get him where an ignorant person hurts. -
Excellent gluten travel story and so pleased to see it has the promise of a happy ending. I love the part where the doctor tells you that you can't be gluten intolerant. He probably went home, ate a big steaming bowl of "healthy" whole wheat pasta, and one chance out of three, felt bad later but didn't connect the dots. You are so far ahead of the game...

ARCHIVED Neurological Symptoms From Intolerances
kwylee replied to superfob's topic in Coping with Celiac Disease
Since finding out I am gluten intolerant, also to casein & soy, (with 95% of my symptoms being neurological within mintues of ingesting any of it), I now have found that I cannot tolerate what I would classify as STONE FRUIT, (peaches, plums, anything with that big pit - also cannot tolerate raw apples. The feeling isn't neurological, rather like someone... -
Also on those tortilla chips, I can't eat most of them because of the demon soy!!! But FRONTERA makes tortilla chips without soybean oil and I tolerate them just fine. But keep in mind, may be the corn for you; corn gives many people problems.

I had that scared to eat feeling when this all started too. Don't intend to do it over again, but if I had to, I'd: 1. Choose ONE food at a time to eat, then I added one additional food at regular intervals, e.g., every other day. (Yes, sounds extreme and very boring at first, but I wasn't very hungry in the first few weeks. The food choices grow exponentially...
