    ARCHIVED Rice

Hi Barry, I'm approaching my 2 year gluten-free anniversary. While I still prefer rice, sweet potatos or squash vs. white potatos, I enjoy an occasional traditional white potato: mashed, double stuffed or home fries. If you're having issues with white potatos, there are other delicious root vegetables to explore and supplement your diet. Rutabegas...
  2. I had fresh okra that needed to be cooked, and I didn't feel like cooking. But I hate to waste food! I boiled 2 cups of red lentils with 2 cups of water and a can of diced tomatos while I sauteed chopped onion, serrano pepper, red pepper, garlic and sliced okra over medium high heat for 7-10 minutes. The onions actually burnt (and turned sweet) and...
  3. Hi Tamesis, I don't have a child, but my DP acted like one when I went gluten-free. It's a big change for them, and takes time for them to get used to it. I think they go through grief from the loss of "it". They've had "it" there whole lives and all of a sudden we take it away. I had a "Come to Jesus" talk with him a couple of times. He started...
  4. Squirming, I'm glad you're feeling better. I find it helpful to eat like a diabetic in the early smorning and afternoon (small portions, low carbs, frequent snacks). I must have a good lunch. DP always wants dinner early, I always want it late and light. I still have a problem with eating in the morning, but liked my puffed brown rice cereal the banana...
  5. Hey Marilyn,Thankyou!Just got your message, sorry I've been off line!Don't you love that avitar,it's allways been one of my favorite's(winking cougar...LOL!)Cougar/Cougie is actually my nickname, thats how my husband intrduces me...all the time!(it's funny to see peoples reaction)!I live in southern calif.,in the suburbs of L.A near Hollywood.I am a selfe...

  6. How did you feel mid morning? Did it help goin with a high protein breakfast?
  7. Welcome Channing! I hope you find your answer in April. Cyber hugs ((( )))), good luck to you!
  8. Hi Channing, I don't have answers. but I have questions. Have you had genetic testiing for celiac disease. Have you asked for a celiac panel on a blood draw? You have many common symptoms of someone who could have celiac disease or gluten intolerance. Have you been to a Gastroenteroligist? That's where I would start. Good luck, and welcome to the...
  9. And P.S. I guess browsing on a smart phone in the doctors office parking lot, then posting it to the forum is not really smart. I found out I have Lupus yesterday, so that could also explain my wonky liver values. The dx was a pathology report from a skin biopsy of a weird scar on my face. Meantime, I'm eating an apple a day and freaking out...
  10. The Dutch method I grew up with is to add diced celery and onion, perhaps some grated carrot to the egg salad. Maybe a can of tuna. And some peas. I always had that on a sandwich, but it would be ab fab on a bed of greens or a toasted bagel or Udi's bread. Add a slice of cheese and broil it?
  11. I've worked in the medical field for years, but I'm not a clinician. After two years gluten-free, it seems like my neighbors know more about celiac disease than my doctors do. I lost a good RN friend of more than 10 years in this battle. I told my DP that I understood why. She deals with sickness everday she works. It's too much for her to handle...
  12. My flax seed went beyond the expiration date. I put the expired stuff in my compost bin though. I'm sure that's good for everyone down the chain, ultimately me. I'll crank that grinder out pretty soon.
  13. Oh, I feel so sorry for you waterfront! I don't have much advice because I don't have DH, but I've read that it's important to get a biopsy and that the dr. (dermatologist or plastic surgeon) take biopsies from sites next to the lesions, not the lesion itself. I'd call tomorrow to get worked in, even if I had to go to a new doc. If you have any anti...
  14. I bought a coffee grinder for grinding flax seeds and spices 3 months ago with good intentions. I still haven't used it. Bad me.
  15. Neurapathy just reminded me of another stupid office visit. I went to my follow up visit after an EMG and ENG (run the other way if a specialist orders that test). The Neurologist told me I had neurapathy. I already knew that, but had been corrected by other doctors who said that was a diagnosis, so I couldn't call it that until it was diagnosed...
  16. We had buckwheat sourcream blueberry pancakes with maple syrup and Jones sausauge links two days in a row. I used 1/2 a package of a gluten-free pancake mix, added about 3/4 cup of buckwheat flour, an egg, about 2/3 cup of sour cream & 1 3/4 cup milk. (I like my pancakes on the thin side.) The batter was even better the second day after refrigeration...
  17. Wheat germ is not as highly processed as wheat flour. As for substitution... "Flax Seed Flax seed works well as a substitution for wheat germ not only in baked goods but in recipes like meat loaf, homemade veggie burgers and homemade granola. It's a good source of healthy omega-3 fatty acids, thiamine, calcium, magnesium, manganese, phosphorus and copper...
  18. I can so relate to your post! I work with nurses and have made it a point to have lunch before their official lunch hour (1 pm - 2pm). Inevitably, somebody walks to the lunch room and quizzes me about my food. In some respects, I wish I'd never said anything about my diet, and that my co-workers weren't so wrapped up in what I'm eating. In other ways...
  19. I love the term "celiac stupidity!" Way to go Luv! Thanks for the laugh, needed it!
  20. This office is paperless, so everything's on the computer. The D.O. clicked on lab results and saw that I had a low Vitamin D level. She asked me if I was taking supplemental Vitamin D. That result was from a year ago, so I asked her if she'd ordered a Vitamin D blood draw, and she admitted she had not, and that's what tells me in a nutshell she's not...
  21. Pastariso is available at the gluten-free Mall. I tried this at a local gluten-free expo and bought four packages. Wish I'd bought 3 times that!
  22. Here's the link for the chocolate pie. I substituted Rum for the vanilla because my vanilla was so old (it had been a long since I'd actually felt like baking.) If the link doesn't work, check allrecipes.com for Dream Pie. Open Original Shared Link I topped the pie with sweetened whipped cream and dark chocolate shavings. I don't have a double...
  23. Yumm! You have me salivating!
  24. Hi Jinx, you sound like a lovely, concerned girlfriend. Since your DP has already been tested and wants to give gluten-free a try, and the diagnosed son is visiting, I'd do this: Buy a new cutting board and one non-stick pan, a new dedicated toaster (you can get one for $5.00 now). Save sorting your gluten-free free foods out for later. I'd concentrate...
  25. Yesterday at my office visit, my D.O. was reviewing my blood work ordered by a neurologist in the same medical group about four months ago. She said she didn't know how to interpret the results, but it looked like I could be positive for Lyme Disease. She said "I never order blood tests I don't know how to interpret", then proceeded to tell me that...
