  1. It just takes time. It was about three months before I felt better and about a year before I was felt healthy.   3. I would get extreme fatigue and brain fog that would last for days when I used to eat wheat. I used to have a lot of dizzy spells and would pass out but not quite the way you described. I never had too many GI problems before going gluten-free. This goes to show that we just can't eat gluten. Ianm
  4. I too have never had a reaction to beer. I only drink Newcastle Brown Ale or Guinness Stout and Heinekin if the other two aren't available. I usually can tell within a few minutes if I have ingested gluten. There is a lot of confilcting info on beer. It seems to me that there isn't enough gluten in it to trigger a reaction in me. Ianm

  6. I have to travel a lot for work and every Denny's I have eaten at has made an effort to accomodate me. They at least allow me to substitute any bread with something else. Have never had a problem with anything I've eaten at Denny's. Ianm

  8. My diet is mainly meat, green vegetables, fruits and nuts. Protien and fats take longer to digest and you don't feel hungry all of the time. A diet of mostly plants is high in carbs and digests quicker so you feel hungry more often. I have found that the right balance of protien, fats and carbs allows me to eat much less than I used to and not feel hungry...

    I had almost no energy before I went gluten-free. Now I can walk for 1 or 2 hours a day and ride a bike also. Before going gluten-free I could barely do any of these things. When i don't get to exercise I have less energy the next day. Ianm
  12. More bad news. I bought a 16oz bag of lentils at Whole Foods and found 8 barley kernels in it. Looks like there is no escape when it comes to lentils. I ate a 1/2 cup and am not feeling any ill effects. But if you're extra sensitive it is probably not worth the risk. Ianm

  17. I travel a lot for work and have never had a problem with salads. I say no croutons of course. I always request olive oil and balsemic vinegar for dressing and have had no problems.
