Just wanted to mention that when I saw my doctor last month - first time since gluten-free (8 months later) and he said that I am doing the best of anyone he's recommended the diet to in 5 years. I was surprised, as I am not officially Celiac, but I think it's that people just aren't as compliant as I am, nor are they as sensitive to their symptoms. Really... -

My insurance may have covered some of it but I have a weird plan - only get the first $500 a year covered, then I'm on the hook until $3,500 so I didn't bother. But I did use some of my cafeteria plan funds (from work) to pay for it, and that was ok. Stephanie -

Yeah, what a disappointment, dreaming about eating forbidden Chex Mix! I never liked it anyway! When I first stopped eating nightshades (potatoes, tomatoes, peppers, eggplant) I used to dream of eating pizza and Mexican food. You'd think by now I'd learn to enjoy these dreams. My husband shakes his head and says it's sad that even in my dreams I'm worried... -
Last night, a friend was over when I had a small chest pain attack and she immediately quizzed me on it and said it sounded a lot like when she has pleurisy. FWIW, that is also common in scleroderma. Sigh. Well... I guess I'll know a lot more next week (I hope!) when I have my rheumatologist appointment. Stephanie

Hi Mike - Welcome! I also figured out my gluten intolerance by going low carb. I was so happy until I found low carb bread (what is that stuff, like 99% gluten???) PS in case any of you were sad for me, chocolate does not seem to have an adverse effect on me. But I don't eat a ton of it and when I do I get the really good stuff (dark chocolate!!!) so maybe I'm avoiding some of the mold... Stephanie -

Mel and I have been talking about this on another thread - Fit and similar sprays have citric acid in them and citric acid is mainly made from fermenting a sugar with aspergillus niger, which is a mold. Many restaurants use sprays/rinses like these because they clean the veggies well and don't contain sulfites (illegal). I used to get sick after eating salad... -

Actually, I think the "edumacated" part was a Homer Simpson. He throws "ma" in the middle of a lot of words, including "educated/edumacated" and "saxophone/saxamaphone." At any rate, I am sorry to hear of such a limited diet but can understand the refining project. I keep finding more and more things that cause me problems when I eat them. I'm really tired... -

Here's some egg replacer info I got, don't have the source (sorry) but I haven't tried it much... I can't use the EnerG stuff because it has potato in it so I have no experience there to share. I like the idea though of using flax meal - adds fiber and omega 3. Sorry it was a bummer! I am too familiar with that experience... Steph -

PS saccharine is not banned at this point in time. I can still buy (or did last year) diet tonic water using saccharine. It is less harmful to me than aspartame or splenda. Stephanie -

I like the rant about soda not being a food. It's not. I know it's tasty and I used to drink a lot of diet Cokes back in the day but I can't stomach it now. I can barely stomach plain soda water - the carbonation screws up my digestion. Just wanted to point out that maybe it took 24 cans of soda a day to give the mouse or rat cancer but cancer isn't... -

Oh, I love Mary's Gone Crackers originals!!! Those are DELICIOUS! I got a non-gluten-free friend hooked on them this past weekend... Omega 3s is a great idea. Helps me a lot. I don't have either of the Celiac genes either, and my score was 9 for the IGA and 7 for the Antitissue Transglutaminase but I had been gluten free for 5 months at that point and Dr. Fine at EnteroLab recommended I stay off gluten anyway. I used to take hyosciamine. It sort of helped me, but not greatly. I am now taking a generic version of Librax and it seems to help more than hyosciamine did.
