Earlier this summer (June) I had gone to my GP to basically brag about how well going gluten free was going for me and could I just get some basic tests for autoimmune stuff just to make sure nothing else was going on. I then tested neg on all thyroid stuff and most arthritis stuff but had a positive ANA so my GP sent me to a rheumy who tested me for everything...

Carbohydrates can cause fluid retention, too, and bloating. For example, when I don't eat starch on the plane, I don't swell up in my legs, but I do otherwise. Can you eat eggs? Try going on an egg, cooked veggies and cooked fruit diet for a few days, say away from grains of any kind, and see if that helps. Also, chicken and fish should be ok. Whenever... -

Also, Food For Life has brown rice tortillas. I haven't seen or tried them yet and have read mixed reviews, but if you can find them, that's another option. I've been on the lookout because I am avoiding corn... Stephanie -
Quinoa is definitely gluten free. Some grains like this are suspect because the facilities may also handle other gluten grains. I know that some countries don't consider all gluten free grains to be gluten free but quinoa definitely is. I eat quinoa flakes for breakfast often - sort of close to oatmeal. Stephanie

Many soups, especially cream soups and cheese soups, have flour as a thickener or a stabilizer (sometimes the milk part separates from the broth, etc). If you make it yourself, your regular recipe might not contain it. But a lot of commercially prepped stuff has flour in it - in a surprising amount of things, actually. Soup is probably going to be off...

It's funny about corn - when I eat it, I think, boring! But the more I eat it, I crave it, I dream about it, I create entire meals with it (polenta with corn nibs thrown in is delicious!!!) and I just get out of control. It's weird. Hi Rachel - My approach to reintroducing foods is to stay off for a few days, say a week, then start bringing small amounts back in. If problems persist, then back off of them I go. If I was still feeling bloated, I would just wait a little longer. Make a deadline for yourself, say, I will stick to my mimimal diet for, 2 weeks (or a month or whatever... -

Also, if you want the minimalist approach, a good lotion for hands, body and face, as well as a leave in hair conditioner (if used sparingly!) is virgin coconut oil. Hey Jen - Have you tried Open Original Shared Link yet? Their lotion is pretty heavy duty... I can't use it on my face but on my hands, before going to bed, it's pretty strong stuff. Also no chemicals, parabens, etc. I have had a hard time finding shampoos and stuff that are gluten free and also free of parabens that actually don't dry my hair out but... -
Sigh... lovely, lovely clam chowder, especially with oyster crackers floating in it... mmmmmm.... Darn, if it weren't for the gluten in the oyster crackers, the potatoes in the soup or the clams... well, I could eat it, darn it! While not everyone gets worse or more sensitive the longer they are off gluten, many still do. I'm one who is way more sensitive. I'm also that way about one of my other food intolerances - nightshades. I used to eat tomatoes and potatoes a lot, also peppers, and I guess I did feel sick a lot but didn't figure it out until 6 years back. Now I can get sick...

I've read a few testimonials about cabbage soup being really healing on the gut. Take a cabbage and chop it finely, toss into a big pot and add enough water to cover, add onions, salt, pepper, other spices if you want (I add carrots and chicken broth) and simmer for an hour. Hi - I just wanted to chime in, I don't have a Celiac gene and I didn't have malabsorption but I have really bad symptoms when I get any amount of gluten in me. The problem is that Teflon pans get scratches and gluten can get stuck in the scratches and be hard to remove. I don't know what the amount is that can be left as residue in these scratches but for myself just don't use them anymore.
