ARCHIVED Any "home-canners" Out There?
skbird replied to jenvan's topic in Introduce Yourself / Share Stuff
Jen - not really. I just jam as much fresh basil as I can into my food processor, add olive oil and blend. Then I toss in a few garlic cloves, taste, then add salt. Add oil until it's the right consistency. Then I toss in some walnuts (usually don't have pine nuts, and I have a friend who is allergic - who knows, maybe she'll come over sometime and we'll... -
ARCHIVED If She Doesn't Have Celiac, What Could It Be?
skbird replied to carrielynn's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I went to a gynecologist yesterday - first woman I even went to, and she is having me get an ultrasound to look for endomteriosis. She said it might not show up but that if it came back find, don't worry, she "won't think I'm crazy"!!! WOW! How unusual. I'm already feeling more confident about some aspects of my health care. She didn't even MENTION anti-depressants... -
ARCHIVED What My Gastro Wants To Do Now...
skbird replied to Wandering Hermit's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hey WH - I just FINALLY got an apppointment with a GI for next Thursday (for a con$ultation...) so I hope that is a good experience. Probably he will be pissed because I have been gluten free for nearly a year and no amount of money will get me back on the stuff. But I think my problem is bigger than gluten. For example, as I just posted in my endometriosis... -

Rachel - you are coming along nicely, Grasshopper! Aren't those numbers something? I don't have either of the two Celiac genes (same as you...) and yet we both react. Genes aren't everything, but they can help indicate to you that you are more likely to have a problem. But as you can see, 81% of everyone has at least one gluten gene - which really does... -
The other day my husband had a non-alcoholic beer and for some reason I got confused, thinking it was gluten free (you know, at some point it's hard to keep track of which thing is free of what...) and so I leaned over to kiss him and he turned and kissed my cheek. I said, "what the ?" and he said, "I just had this beer, you could get glutened..." I couldn...

ARCHIVED My Husband Is The Best.
skbird replied to frenchiemama's topic in Coping with Celiac Disease
I have to agree! My husband has been really cool, too. Ever since he agreed to get rid of the toaster oven and his sourdough toast... we're not totally gluten free (he still has crackers and cookies) we're about 80% of the way there. And since he stopped drinking over two weeks ago, no worries about beer kisses, either. It's wonderful having someone supportive... -

I still haven't done my official canning. I have just been busy all summer - I meant to start small with some freezer jams and go from there. But I have been making big batches of soup on the weekends - cream of broccoli, spinach or whatever else, and pouring it still hot into the jars, putting the lids on and sticking in the fridge. Makes a good seal... -
Brenda - You scored on the Freestyle! In the US the normal range is about 75 - 115. I was always getting results in the 70's and 60's though and thought my meter was broken so I tested my husband and he came back at 140. Then the next time, after he'd had beer and some pasta I tested him and he was 180! I got freaked - that's not horrible but it's on...

OK, so my gyne thinks I probably do have endometriosis and is going to start me on birth control - the ring (Nuring) which is inserted and left in for three weeks. After the first month or so I can start skipping periods and see if that helps me out. I am having worsening bowel symptoms in a cyclical way, meaning that from ovulation on I am having more...

Bobcatgirl - I hear you on having the family on the forum. I will think - hey this is a good thread to send to my husband/mom/dad/brother, etc, and then think oh crap, I wrote this there... uh... oops! So I don't share it much. Not everyone appreciates honesty. I'm still getting crap from my dad from when I wrote in a column (I used to have a weekly column...

ARCHIVED Artificial Sweetener
skbird replied to mandigirl1's topic in Gluten-Free Foods, Products, Shopping & Medications
OK, just a couple of more things about stevia. First of all, real stevia does not have carbs - when it's blended with maltodextrin or other things (like xylitol or lactose) it does have carbs. It depends on what it's mixed with. Second, it's not a root, the leaves are what are used. That's why it was called by natives of Paraguay and those who... -
Probably the low gluten is a CYA, as in, "we probably can't be trusted to do this right, so there's a chance of gluten..." Anyway, given Tiffany's review of the pasta, I probably won't be that interested. I asked my brother's fiancée about it (one is right next to her house) and she said it's a step down from Olive Garden and Macaroni Grill (I've never been ...

I know that microscopic colitis can be improved by avoiding gluten. I don't know for sure about UC - someone here on this list has it though... can't remember who. Sounds like a horrible disease though. I read a book, it was a collection of essays about friends who stopped being friends (you know how when a couple breaks up, people go through that process...

ARCHIVED Generic Medical Question - Allergies
skbird replied to bluelotus's topic in Related Issues & Disorders
I have a problem with nightshades, though I never noticed joint pain with them (I know many people with arthritis avoid nightshades for this reason). I instead get sick, much like a gluten reaction. After researching it I found my reaction is much like the one people get when they eat green potatoes. I found this out by calling the poison control center.... -
I don't eat out much but I have some things I always try to do when I do. For example, I always try to sit nearest where the waiter will stand (so I'm not yelling to them) or make sure I can beckon them over to me when I order, and I also try to order first, because everyone else is usually still trying to decide what to get. Then the gratuitous joke is usually...

Hola - I got my first one at Walgreens for $15 and the test strips were 100 for $40. You also have to buy lancets but they are not that pricey, something like $5 for 100. You don't have to test as often as I did - that is helpful in hypoglycemia but not as crucial in diabetes as blood sugar tends to go up rather than rapidly fall, as in hypoglycemia....

ARCHIVED Artificial Sweetener
skbird replied to mandigirl1's topic in Gluten-Free Foods, Products, Shopping & Medications
I'm with Kaiti on this one. Artificial sweetners are not good for anyone. I have heard people try to tell me "well, you use so little of actual Splenda (sucralose) that it can't hardly hurt you..." Um, they tell this to a person who is gluten intolerant? Uh, no, that argument doesn't hold water. I have never been as sick as I was when I was chewing aspartame... -
Another thing you can consider, if you are a do it yourself type, is buy your own blood test kit and check yourself out. I bought one because I was having a bunch of hypoglycemia symptoms but was chicken about doing that glucose test, too. Sounds awful. Anyway, what I did was buy a Walgreen's store brand one - it was about $15, and some test strips and then...

ARCHIVED Why Allergies To Eggs But Not Chicken Meat?
skbird replied to Jeepster's topic in Related Issues & Disorders
I eat raw egg yolks in hollandaise sauce... mmmmm.... Actually, about salmonella - if you clean the eggshell before you crack it, the egg will be ok. Salmonella exists on the outside of the shell, not in the egg itself. Also, if you know where your eggs come from (IE you or a friend have chickens) and you know they don't have salmonella, then you are set... -
Actually, since gluten intolerance isn't an allergy, you don't necessiarly have a wheat allergy, too. That is a different body reaction - a histamine reaction, whereas gluten is an autoimmune reaction. You could have both, but not everyone does. Stephanie

I'm seeing a gynecologist tomorrow with the intent purpose of finding out if I have endometriosis. I have been having worsening IBS symptoms with my menstrual cycle the last year and a half, also bladder symptoms. Recently I was looking online at IBS correlating to hormone fluctiation and some endo sites kept coming up. I have thought about this in the past...

I wrote back and asked if the restaurant staff was trained on what to do with this pasta (as it didn't appear so, from the first post) and got this response: At least he's honest about it. Stephanie
-
OK - these guys win the award for fastest response. I wrote them an email using some fo the info Tiffany posted here regarding PPM, etc. I got this respons about 15 mins later. Very interesting. Stephanie
-
Erp. The name was in the subject line... (I'm slow...) Anyway, I just looked online at their menu, here's the quote about the pasta (but not %) Oh boy - sub for low gluten pasta that still makes you sick and it's only an additional $1!!! WOW! What an opportunity! I think it should say "LOW-CARB, HIGH PROTEIN PASTA" because low gluten is no selling...

OK, I'll bite (I live in NorCal) - what chain? 1% it totally pointless. Why would they even bother? Stephanie
