Other than the weight loss, your experience is almost exactly like mine. I went through Enterolab and am not Celiac but have autoimmune gluten intolerance. My coworker brought this in - she'd got a big pack from Costco, and I was so surprised to be able to eat them. They say wheat free on the pack but on the web they are also listed gluten free, plus casein free. Hey Michelle - I think I saw it here but someone else posted recently that Yosemite is *very* accomodating about gluten free. Aparantly, you can contact any of the restaurants ahead of time to check but they have some gluten free meals and I think you can even buy Amy's frozen meals at their stores, etc. If I find the post, I'll give you a link. FYI on the gallstones without the gallbladder - from what I've read, gallstones are actually formed in the liver and then collected in the gallbladder. So that's why you'd still get them after the gallbladder is removed. I think I read about someone on this board saying they got sick after using a mac and cheese powder packet but it could be that it's hard to keep cross contamination with all that pasta powder on the packet. I used to love Annie's mac and cheese - I know I've seen on their web site you can order the cheese packets without the pasta. Not cheap though... -
I was just up in that area in February. If you go to Moscow, the Moscow Co-Op makes their own gluten free bread twice a week and it flies off the shelves. I think Tues and Sat. I was there on a Sunday so missed out. Can't help with Coeur d'Alene and while we drove from Spokane to Moscow and back, we didn't stop for food. Not much gluten-free to snack...

Also, heart palpitations can occur with hypoglycemia. If you are type 1, you use insulin, right? Have you noticed if the palpitations occur near low blood sugar or a fast drop in blood sugar? I get these, I'm not diabetic nor do I use insulin, my body does more than enough to make sure my blood sugar is low on its own!!! Stephanie -

I think bad PR is the way to go. I'm a marketing person, so I know all about what PR does to a business. Places with no-substitution rules are a pain.
