  1. When I first started eating gluten free ( I was gluten free MAYBE 2 or 3 months) , I did cheat ONCE,, never ,ever,NEVER will I intentionally consume gluten again . There is no food worth that !!

    Checking for CC and checking any meds for gluten would be your first step,,which I am sure you already have done. Allergy testing would be the next test you should ask for, and also ask about doing an elimination /reintroduction diet to pinpoint any remaining allergys or intolerances .With being a type 1 diabetic you would want to be under a doctors...
  9. What I miss the most is the convenience.Although I do miss chewing gum and mayo. I have to agree with Sylvia , I dont think I have ever eaten better/healthier than I do now.

  11. If you are planing on having any kind of testing for celiacs I would suggest having the testing BEFORE you go gluten free.

  14. About 7 months after eliminating gluten I realized I was still reacting to something. I would eliminate the suspect food for awhile and then eat it to judge my reaction. I found I was reacting to soy,corn,nightshades.Then in January I stated an elimination diet to find any remaining intolerances or allergys..

  16. Is it normal for your body to freak out when going gluten free?? you bet, you body will go thur withdraw from the gluten. Hang in there it will get better. Have you had any testing (blood work) to check your vitamin,mineral levels? Have you had your thyroid checked??
  17. Thanks for the info but unfortunately they do contain soy. I guess I will just have to learn to live with out mayo I know it is kind of silly but out of all the foods I cant eat, the loss of mayo bothers me the most

  19. sometimes underlying intolerance do not show up in allergy testing (blood work or skin testing), the only way to find them is thru an elimination / reintroduction diet. I understand your concern that there may be something else going on,, for some of us there is,,, for me there are multiple intolerances and allergys inaddition to gluten . Staying gluten...
  20. I agree it definitely gives you a new perspective I have found that by going very,(very,very ) basic and simple that foods taste amazing. I am tasting and enjoying food as I never have before.. It is as if without gluten and the others problem foods in my diet I am ACTUALLY tasting food for the first time.

  22. I understand, I was vegan or vegetarian for most of my adult life.My body at this point is unable to tolerate those sources of non meat protein I have depended on in the past. I also am not a meat eater but because meat,veggie and fruits are what my body can currently tolerate that is what I eat..I hope that after my gut has healed to be able to reintroduce...
  23. As much as I dont want to ,, I have to agree. I was vegetarian or vegan for most of my adult life. I have desperately tried to keep non-meat sources protein in my diet . My body has decided other wise The foods I can currently tolerate are meats ,certain veggies ,certain fruits and very small amounts of white rice. I need to listen to my body
  24. I react to potatoes but sweet potatoes are OK for me,,,different family I believe. I throw a sweet potato in the microwave, or I will bake some extra to have leftovers for a quick meal. I take ground beef or ground turkey, add a little leftover rice and red onion ,form in to a patty and fry, OMG it is soo good
