Since there was no clarification on that thread (that you mean anyone's body), to me, that meant YOU cannot tell when it happens because you have no physical signs you've been glutened , whether accidentally or intentionally. I thought that was why you were so curious...
  3. Lisa raises a good point. Some people can't tolerate them at first. It does not mean they are not good for you, or that they are harmful, but maybe they are just too much. Skip them for now. You can always try them again in a few weeks.

  5. Actually, I believe that EatMeat4Good loves chicken livers, too. You've got company. Enjoy! It is VERY hot here today, and even though I hate it, the AC is on, so I pulled out the counter top rotisserie and herbed up a chicken. A mixed green salad with goat cheese, dried cranberries, carmelized walnuts and balsamic dressing.

  9. Elana's Pantry has several grain free bread recipes that are delicious and there is no bread machine involved. I make them all the time and they are easy and quick. If you are looking for a sandwich type bread that is grainless, that is a bit more tricky. She has a "mock" rye one posted there as well. Google it!

  12. Don't bother. I pressed my sister (diabetes, hypothyroid, high BP, etc. etc.) because I know siblings should be tested and her symptoms are obvious, but it just irritated her and I backed off. I worry about her, but as my doctor (and Peter)both have pointed out, she does not want the hassle of dealing with a gluten-free diet and prefers to manage her...
  13. They always forget to check the Folate level. I had blood panels done over and over and that was not on it. The B-12 level was tanked and so, I was supplemented, but I still felt like hell. It kept me weak, fatigued and dragging for a while after DX. When I read that it is often affected in celiac, I asked for the test, and there it was. Very low....

I suggest: Thyroid tests: TSH, Thyroid antibodies, Free T3 and Free T4 B-12 levels Iron (RBC) hematocrit ferritin storage levels FOLATE level Vitamin D level These are the ones linked to fatigue, energy and hair loss. (the Folate anemia is the one that really messed me up) But others may have more suggestions.
