Add in one high histamine food per week, for example, eat a bunch of shrimp or lobster for one day and see what happens, but no other high histamine foods. The entire book is well written and having met the man, I can honestly say, that he is the most down-to-earth compassionate doctor there is and we are fortunate he is our most vocal celiac advocate.   8. I agree with this totally: Make sure to try the salmon, if you like fish. Best salmon I have ever eaten was in Ireland. and would add: no one on earth is more accomodating than the Irish, IMHO.   11. I have a 3 ring binder for "gluten-free recipes"--- i.e. baked goods and my old binder which I have had for YEARS which contains everything else. Plus a bunch of recipe books, magazines and a big ole file folder marked "try these". Margarita dinner --whoohooo!! Gimme one! Gimme one! cheers, babe.

  15. The path to finding what else may going on besides gluten intolerance is not always a straight walk, but you can "get there" if you are persistent. Just hear me when I say this: Don't let it consume you and make you crazy. Stressing out over "is it this? is it that?" just creates inflammatory cytokines in your body and that just perpetuates GI tract...

My GYN, former Endo (cause I do not need him now), a psych doc I went to for "anxiety meds" (I never took )and my PCP--all test for celiac if their patients present as I did with a plethora of symptoms--especially the "extraintestinal ones" because I MADE THEM read the literature. Still working on the 3 neuros I saw. They are stubborn. lol ...

(I did that out of sheer desperation on my own since no one could give me any answers and my cousin's wife with NCGS told me "I think you have celiac!) anyway...
