  1. It took my Mom a few times before she stopped asking what the difference between white flour and wheat flour was. Every time, she would say "scratch that, forget I said that, that was stupid" She took it "personally" that I got the DQ2 genes from her and Dad. When I met my husband (who is Irish American) I proudly told him my mixed bag of ethnicity (Armenian, French Canadian, German and 1/8th Irish) We both mentioned we wished to travel to Ireland sometime.   4. Not to sidetrack this funny thread , but you find Chipotle to be very gluten-free friendly, then? I am taking my first gluten-free looooong road trip in March (having to bunk two nights in hotels) and am just a teensy bit apprehensive about eating out on the road. I rely on tips from everyone on here and that has kept me "safe" so far. Thanks!

  7. Not sure I am grateful for the disease itself, but I am damn grateful I figured out what was trying to kill me because being gluten free saved my life. I am beyond grateful to my husband who never lost faith we would find an answer, who drove me to hundreds of doctor's appointments in 3 different states over 3 years, who picked me up off the floor...

  9. I have never noticed that about you, Skylark. I am talking about people who are (understandably) anxious and scared and grumpy--because they do not feel well, perhaps? I find we do a lot of explaining and soothing to get them to understand something. I sometimes find myself saying "sorry, maybe you misunderstood what I meant...." until finally there...

  12. Absolutely. But to echo Peter's advice, don't let it paralyze you. Make your home gluten free, read labels, know how your food is prepared. If it happens (and it will)-- know that it will pass. Life may be a gluten-filled landmine, but being wise about CC is your kevlar vest.

  14. Amen to this. It makes me very uncomfortable when someone feels an opinion is a judgement of some kind and lashes out at others on a thread. I thought the purpose of a forum was to discuss. I always say IMHO so as not to offend, but sometimes it is like walking on eggshells. I am not here to argue; I am here to learn and help if I can. Maybe some people...
  15. Peter, I have often wondered...wouldn't a FAQ section with these kinds of queries stop those repetitive questions? I know when I first joined the forum, I used the search mode for threads, but I also probably asked questions you guys answered many times as well. (And thank you all for your unlimited patience )

My best friend is a chef/caterer in Florida and she says it is not a big deal to accomodate special diets if you are using fresh ingredients.   22. Thanks, this is all I was trying to say. Anyone with celiac who continues to ingest gluten is reversing the healing they have done and starting the autoimmune response once more. That is like playing with fire. Why anyone would do that to themselves is beyond me.(To each his/her own, I guess.)
