The book I recommended (above) Recognizing Celiac Disease --has quite a bit about gluten, what it is and how it "attacks", protein toxicity, antibodies, and what ensues in the GI Tract and the entire body in celiac disease. Not sure how much else there is to know after all that, but if I find anything else, I'll let you know.

Also, as more and more of us become vocal about it, and more people are DXed, all the old school thinking will change. The next generation will not suffer for their whole lives as so...
  10. Gall bladder disease was one of the first real problems I had. Even removal of that 27 years ago did not resolve things. It just got worse....No ONE in my family still has a gall bladder--not my Mom, sister, aunts, niece, or several cousins---all gone. Coincidence? Hardly.

  14. I have nerve damage BODY wide. My scalp, back, neck, trunk, backs of my legs, backs of my arms, FACE ---BURN. My hands and feet burning and tingling and numbness resolved FIRST, but I still have a lot of stuff going on. My GI doc says he has never seen anyone with celiac manifest with symptoms as I have. You may need to read about the differences between food allergies and the mechanisms of Celiac disease. If you go there once a week and she has NOT adapted to your dietary needs by now, you need to either politely school her on what is safe for you to eat so she does not make you things that you cannot eat and make you feel like you're ungrateful OR bring your own food, honey.
