You might try something radically different than what you are doing. The carbs in bread do things to your body that are kind of like a "drug high". I'm not a doctor, but given the experiences of people here, I would say you should assume yourself to be celiac. Your positive EMA is a very specific test to celiac, it is a tissue damage antibody.
