Your kitchen is really cute, even though it's tiny. Hooray for you..experimenting with the bread! I just got my mixer. I took it out of the box yesterday, but didn't run it yet. If I get glutened I get hyper and happy at first, then I sort of crash and I'm depressed. My hubby noticed it before I did. If I start talking fast and sound real energenic he asks me what I've had to eat. -

The thought that you have a disease and must treat it by never consuming gluten again can be very overwhelming at first. Take some time to read about it and the good foods you CAN have. At first, it's best to stick to whole foods like fresh fruits, unprocessed meats, and later..once your villi heal..add dairy. You can still have wine! As you heal... -

Your blood tests seem to show a potential for problems? It doesn't mean you have developed Celiac, but could. With no villi damage it should be safe for you to do a gluten challenge to see how you react? Gerd could be from dairy or some other food that doesn't agree with you? Well..I've seen that many others have a few "bricks" from their baking exercises. LOL I guess we will be able to answer the question.."how many bricks does it take to "build" a good loaf of bread"? I never ate a lot of bread either. One loaf of Udi bread lasted me 6 weeks..kept in the freezer of course. The last of it was used to make croutons... -

Nausea was one of my worst symptoms before being Dxed. It showed up 2 months before my Dx and I think contributed a lot to the weight loss I had? I hope you're able to continue on with your challenge, but some people can't due to how lousy gluten makes them feel. -

LOL Sylvia! You have a better chance of making the perfect bread. I don't have any experience with the various flours. I was never much of a baker because everything has to be weighed or measured and have the correct ratios, etc. I'm better at cooking where I can just sprinkle a bit this or add a pinch of that..and it all works out. -
Before going gluten-free I used to get lemon poppyseed scones at the bakery near here. I've been craving them like mad! Does anybody have a recipe they can share?

So are you saying you know you have gluten intollerance, but have been eating it anyway? If so, that's the reason for the vitamin deficiencies and weight loss. It sounds like full blown celiac disease. Some people, myself included, have normal blood tests, but villi damage can still happen. I'm curious what tests you've had in the past. How do you know... -

Congratulations...well done! I think it would be especially hard for you to be vigilant since you don't get digestive symptoms from gluten? You're obviously doing it right.
