  1. I had a dentist appointment today... and we of course were discussing gluten.... My new dentist told me that they had suspected his daughter has Celiac, but apparently it's a problem with "junk food". He remarked that he loves bread, and would have a really really hard time giving it up. If he would have said "died without bread" I honestly would have...
  2. Oh my goodness, peeps... I DID IT! Great taste, texture and it isn't mushy at all. I really can't tell it is gluten-free. I am now a certified Chia Freak! I will now use chia and probably not xanthan gum in my recipes. Here is the original recipe (probably Aunt Jemima's) 1 cup cornmeal 1 cup flour 1/4 cup sugar 4 tsp. baking powder 1/2 tsp...
  3. A cold sore (according to the rest if the world) is caused by the herpes simplex virus, which is a totally different condition from DH. It is very likely you could get a DH lesion on your lip, caused by gluten, that looks almost identical to a "cold sore". Both of them hurt and are a pain. Both herpes simplex and DH can be "triggered". DH by gluten...
  4. That's fairly common with a casein problem. My stepson is allergic to milk but can eat cheeses and yogurt and food baked with milk (at least now, not as a kid). The cheese process, yogurt process breaks it down a bit. I assume the same for lactose as well as casein.
  5. Water is usually a good sub for milk. Find a recipe high in eggs. The eggs should make it hold shape. There are milk, soy free gluten-free flours out there like King Arthur. Try a crust from that?
  6. Sorry, here it is... 5 cups corn bread (I leave it out on the counter for a day) 6 slices toasted bread (white gluten-free, whole grain, French (I'd use one with less whole seeds/grains in it)) 2 cups finely chopped celery 1 1/2 cups green onion with tops, chopped fine 1/2 cup finely chopped onion 1/2 cup finely minced parsley 1/4 cup butter...
  7. I don't have a cornbread and sausage stuffing recipe but do have a cornbread dressing with giblets recipe. Want it? I'd leave the cornbread out for a day on the counter. That's what we've always done...
  8. Well, today I am roasting a chicken so I have drippings on Thanksgiving to make gravy with... I'm also making cranberry chutney today (for the second time...). There's enough liquor in there to keep it for 3 months! Went shopping at FIVE grocery stores to buy stuff for Thanksgiving. Local store is out of the usual brands of stuff and y'all know what...
  9. That's fabulous news. Glad to hear it, and sincerely hope the trend continues.
  10. Funny. Where you live and where you're from seems to be very different for a lot of people I know. I'm FROM the southern U.S. I'm IN the southwest. And man oh man are they different! I've spent the bulk of my adult life searching for buttercream icing (apparently they stop making it west of Ft. Worth), wondering why everyone is obsessed with celebrities...
  11. I'm in the U.S. My family has been here a while.... One side is English/Scottish/Irish, Prussian, Italian and French/Acadian. The other is Scottish/English/Irish and rumor has it a bit of Native American. Quite frankly my family has been here so long it's irrelevant, aside from genetics. Oddly enough, I've only recently arrived at that conclusion...
  12. Have fun making them. I'm horrible at rolling them.
  13. Very true. Ironically enough the Neti Pot helps with that, too. It irrigates and moistens the sinuses. I notice a big difference in the way my sinuses/head feels when I use it during dry weather (and when I say dry, I mean less than 10% humidity in the AZ desert). I actually used a humidifier AND the Neti pot many times during the dry seasons. Interestingly...
  14. Yes, I had reflux so bad that I literally would double over, have to pull over on the side of the road..., However, I could tolerate a bit of acid with enough "base" - Like a bit of tomato sauce with pizza crust. I also had fabulous luck eating fatty foods to "calm" it down. I also think that everyone is different, and has different tolerances and...
  15. I understand all that, and i'm sure Mama does too... What I'd hate to see happen here is that the OP gets the idea that the gluten-free processed foods are an absolute no-no at first... While they aren't advisable sometimes they can help get you over a hump...and I'd think a 15 year old very sick, miserable kid would need a little encouragement - especially...
  16. Sorry. Hey, at least now you know. Better than thinking something else is wrong. Hopefully, things improve.
  17. An unprocessed diet would be best (and honestly, that may be all he can handle)...but he is 15 and he's been hella sick....and he has anxiety....so there may be some bending room here to keep him positive (and Mama sane).
  18. Pick up a Neti pot at Whole Foods. It will help clean up your sinuses. And if you appear allergic to strawberries, etc. then obviously avoid them....you may look up berry allergies and see what hints you find. Also, look up high histamine foods.
  19. I had a hiatal hernia, and reflux, and stomach ulcers. No pills worked. Just removing acidic foods from an empty stomach, keeping acid reduced (wayer, food) and visualization to control the acid overload. At one point, I think the doc suspected the meds were swinging me between low/high acid...which I *think* is one reason I stopped taking them. It...
  20. Hey there, sounds like you're having a really hard time. I have DH (or what is apparently DH)... Sounds like you have the DH under control but hives are a problem now? Hives are tough, since the trigger can be different for everyone. Salicylates, bromides and iodine are both known to set off DH. Sals are known to be a hives trigger. I'd keep...
  21. It's been my experience that.meds are overly effective...but that's just me. I'm allergic to sulfa drugs, cephalexin, and can't do corticosteroids. And Valium???? Omg, my head would probably pop off and sprout a tree. As far as food, a bready pizza crust (little sauce or cheese) may be just the ticket. See if you can find a gluten-free pizza crust mix...
  22. You can buy BRM gluten-free oats and make your own. I cook them and add applesauce, maple, cinnamon and butter. Yummy!
  23. In the situation your son is in, feed him what WORKS. Potatoes, rice, bananas, chicken, lamb, pears...whatever works. He'll let you know when he's ready for something different. Soups are great. Make chicken soup - boil a whole chicken and make a stock, then add back tomatoes, onion, carrots...whatever makes it tasty. Add rice noodles if he wants them...
  24. Oh yes it is soooo good!
  25. Hon, you're never too old to learn .
