Yes, it's gluten-free. They say they mark "wheat" clearly. I stick with plain vanilla and chocolate - tried the java chip and it was much sweeter, IMO. Coffee is ok too, but a bit sweeter than chocolate or vanilla. They have these "5 ingredient" ice creams whose labels are easy to read compared to competitors. The dairy (if you aren't already) is tough. Carageenan is a pain, but as long as you're off dairy it's doable. Don't try to find a milk substitute. All of them have sea salt and/or carageenan except one hemp milk...and btw it was gross. I used a few pads of butter in egg whites and was fine. Google "thyca" for a list of high-iodone goods to avoid. If you have enough iga in your skin, if it meets enough iodone...you'll probably get a rash. Just because it's topical, doesn't mean it doesn't hit a mucus membrane and get in. -

First, yes your body needs to heal to absorb nutrients well. If you haven't been tested for vitamin deficiencies do it, and supplament as needed. Also, I got a rude shock last week - I reacted to something in a construction site - possibly gluten since sometimes it's used in wallboard and joint compounds. So BE CAREFUL at work. The only time I've suspected (and when I realized they may be an issue) sals caused a huge DH flare and neuro issues. So yes, the reaction can be just as bad. The DH may have been from iodone (salt) or red food color....but the neuro was from something else. I ate Riceworks chips, that are supposed to be gluten-free...so it was either sals or gluten that... -

There are non dairy chocolates. I have no idea what they are, just that they exist. You could do nondairy covered nuts (melt nondairy chocolate chips). What about Buckeyes, using the same chips? Aside from gluten intolerance (regardless of your biopsy), that's a lot of acidic foods (oj and tomato sauce) combined with long periods between eating. That's a recipe for an acid attack for me! Try keeping the acid diluted with water, eat low acid foods, eat meals close together. That may help. And if going gluten-free helps, by all means DO IT. -

Glutening can last a while - 1-2 weeks for most. Don't use seasoning mixes. I have no idea about Emeril's. You can make his Bam from scratch - look it up. Try a Neti pot for your bloody sinuses. Nose bleeds are another story, I can't help there. The dehydration I don't know - most need a lot of water after glutening. -

I remind myself I could "function" on gluten (ok, not WELL, and not at the end...) and didn't panic at every red spot or tummy upset while on gluten. And there's no reason to start now (okay, there's a slight reason...,). I just take a deep breath and move on. Most days I can (much easier to do now OFF gluten). But don't get me started on bm's!!... -

What kind of cook puts flour in a Creole dish? You're supposed to cook it down to thicken. I know, not your point exactly but there is a definite difference between a dish with a roux base (which Creole isn't) and one that is. You could taste raw flour in a Creole dish. Ick. Tell your Dad if he's going to thicken to use cornstarch. If he wants a roux... -

Very interesting, indeed. I've also been considering the "gut health" issue, and have been considering supplements to address that issue specifically. That said, I am someone who HATES taking pills/supplements so that's saying a lot. -

You can't analyze it day by day, unless you have a major reaction. Then, that should clue you in to a trigger or a source in the last 48 hours or so. Just keep in going....do what works. Concentrate on eating a well rounded diet (minus gluten, milk). Keep your food diary, get your testing. And check your vitamins for gluten, milk!!!
