  4. Sweet rice flour is the best I've found for rouxs. I tried sorghum and it just isn't as good at thickening. Sweet rice flour does taste browner than the wheat counterpart of the same color, so beware. I haven't burnt it but you can smell and taste the stronger flavor.   7. DH runs a 2 week course with me. I go through at least a week of the sores swelling and filling at night, popping and drying up in the morning.   8. Ridiculous. If you find a doctor to test you, wait a while. Steroids can negate Celiac testing by suppressing the immune system. I wonder if that's why DH is hard to dx, because they toss steroids out like candy first. You may read some of the recent threads in the DH area about ways to combat rashes.
  9. Was your mother on steroids of any type? Oral or topical. Steroids are used to suppress the immune system - so they could have lowered her test numbers.

  18. Yep. Botanicals would be. I was a jojoba oil /almond oil girl. Natural salt deoderant....natural hair sprays, gels, Aveeno powder for exfoliant, henna hair color (had wheat in it). Skin care had oats and wheat germ oil in it. I had to change EVERYTHING. Wow. That trip down memory lane made me want a drink...luckily I have Ciroq on hand .

  24. Dani, the one thing to remember is they guides are just that - guides. Some of them say different things, and everyone is sensitive at different levels and to different things. The tricky thing about sals is they are cumulative so you may not see an immediate effect - a high sal food may hit you 2 days later when you hit your body's threshold. Personally...
