  1. I would want to know if the people he cured we're dx'ed by blood work/endoscopy and if the remission was confirmed the same way and if he's monitoring them. And by cured, do they mean they now eat a gluten filled diet? It used to be thought that Celiac was a childhood disease that could be cured, or that they outgrew it after being on a gluten-free...

  8. You can make your own waffles and freeze them. I keep a fresh fruit and chop a bit for breakfast. I also don't add milk to the cereal, I pour it in a glass and let him add it when he sits down.   10. I have weird blood sugar issues which are still not confirmed or diagnosed. I get hypoglycemic after eating sugary stuff a few weeks (or a big binge for a few days). I can eat a slice of cake - just once per week; 3 slices for 3 days sends me hyper which flips quickly to hypo - and it takes weeks of a careful diet to snap out of it. Funny thing, though...

  13. I had an alarmingly high crp a few months ago - first time it was tested. My Hashis antibodies were up and my tsh was off the chart. Very weird. I've been on thyroid meds for years and I've never been that high. It did correspond with me feeling like crap, though. Wish I knew what caused it.

  17. Goodness, I would have lost my mind by now with all of those adjustments. My advice: find a crutch and lean on it. Whether its a food or drink or new hobby. It helps a bunch.

  19. Beans don't have to be prepared with spicy seasonings. Cuban black beans are notoriously bland. As with all thing cooking, adapt. Just browse popular recipe sites for bean recipes. If beans in general bother your reflux that's another story... You can take most any legume or veggie and turn it into a soup or pancake, btw. I like to take leftover veggies...

  21. Well, I won't lecture you but will confirm what you already said - you need to take care of yourself and that means eating. Have you considered a personal chef??? Also, did you screen those bcp's for gluten?? I know how painful endo can be. I was lucky - mine was "cured" by pregnancy (although the trade off seems to be Hashimotos and Celiac???)...
  22. Well, I haven't tested gluten-free flours like this...but for wheat flours I'd just taste a bit of raw flour - if it tastes bad (sour, bitter) it's rancid. I honestly have NO idea what all the gluten-free flours should taste like - I'd use the same guideline. To me, most rice blends taste like "nothing", so I'd be suspicious a mix had a strong taste....
