  1. But they left out the Deamidated Gliadin Peptide (DGP) IgA and IgG test which as I understand it is specific for celiac disease & that's why it was recently added to the full panel & is supposed to be more spot on. Someone correct me if I'm wrong about that please.

And since I have dh (the skin rash of celiac) I have a bit of a different situation & since I'm gluten-free & NOT ABOUT to gluten myself for testing then some things I am not proficient in --- such as interpreting your test results.   3. You can never tell which products use iodized salt unless you check so I have been doing some research today on that subject. My dh is sensitive to iodine and we are about to try the hubs on low iodine to see if his will calm down more. Frito Lay gluten-free products: I spoke with Page & she tells me Frito Lay uses non iodized salt in all their snacks...
  4. I agree. Too much processed food & soy. Soy kills me. Take it all the way down to very simple stuff & those salads --- use your own oil & vinegar. Salad dressings, even gluten-free ones are generally heavily dependent on soy. Better to simply use wine vinegar & olive oil. Check the ingredients on the almond milk too. It might have soy in there...
  5. I think if I had my cast iron dutch oven everything would turn out better. I know exactly when the oil is the perfect temp.; been doing it so long it's second nature to me. UGH! When we get those things out of storage I'm going to have to go through a process to de-gluten them & then re-season them.
  6. Have you been tested for the anemia since? And did it resolve? When were you last tested for anemia? MAKE SURE YOU DO NOT GO GLUTEN FREE UNTIL ALL TESTING HAS BEEN COMPLETED!!!!!!!   7. Carolyn, it certainly sounds possible. I'm curious as to why they did a celiac test on you 8 years ago? Were you having problems then? I think I would try calling the doc who decided to test you for celiac previously.

And I daresay that somehow a change takes place within us when the body is free from the grip of gluten where we become turned off by even the thought or smell of gluteny foods & our bodies & hence our brains tell us that fruits & veggies really DO taste good...
  14. Many things could have caused the negative result. Either it truly is negative or it was a false neg. which happens a lot! The doc could have failed to do the FULL celiac panel which often happens. The doc may not have known how to interpret the tests which we have seen happen a lot.   15. The cornstarch doesn't have any potato flavor & when fried up tastes like fried chicken done with wheat flour. Yes, the cornstarch is much easier on the pocketbook than tapioca flour.   20. I'm just the messenger. All thanks go to Chef Mike for being such a sweetheart & getting this for us. I'm thinking the BRM flour is the All Purpose Baking Flour as I have a bag here & the ingredients are: Garbanzo Bean Flour, Potato starch, Tapioca flour, White Sorghum flour, Fava Bean flour. I love that the recipe is so simple too!
