Thanks Gal! I really can't praise the book highly enough. It's amazing how they figured it all out. It's very interesting reading what worked for them as well as what didn't & why. The cookbook is "How Can It Be Gluten Free" Vol. 1. It's by America's Test Kitchen & they nailed it!!!! They now have Vol. 2 out but I have not gotten it yet. It takes a while to find them. At first I was saying, "UGH! ICK! Who can eat this stuff????!" to everything I tried. You keep finding & trying different things & you run upon 1 here & 1 there that tastes like you remember. After a while you build a repertoire of replacement foods. This is interesting and thank you for posting it. I am not saying this won't work or doesn't work but I just looked up numerous low histamine or histamine free diets and for the greater portion of my gluten free life I have been eating a low to no histamine diet even though I wasn't aware that's what I was doing. I could say it didn't make a bit of difference... -

Better doughnuts, pies & pastries in the coffin than our own bodies right? AND there are gluten free versions of ALL those things; I guarantee it! You will be amazed at how much they taste like the gluten versions. -

No, kellibee, you should NOT quit eating gluten ANY TIME before the scope. Don't risk screwing up your biopsies for sake of a few days. But you don't have to eat a ton of gluten --- 1 slice of bread or a couple crackers each day. -

I have never used the Land O Lakes mixes you are referring to, in fact I've never seen them in the stores I have been in but I don't see the problem here. They have not said there is any cross contamination so why do you think it's cc'd? They state it's gluten free as defined by the FDA so they obviously are confident it will test under 20 ppm. So you're saying they say you do have celiac disease based on the positive blood work twice now. I understand they say the biopsies are negative. And you're saying they want you to eat even greater quantities of gluten for 6-8 weeks & then repeat the endoscopy with biopsies but they want to go deeper in the intestine. I know you're going to have a rough road ahead of you with your mom but do your best. There are celiacs who are termed "silent" celiacs --- they have zero symptoms. We've had several on this site. 1 whose sister was dx'd b/c of terrible symptoms -- our gal had zero symptoms but got tested as is advised & she actually turned out to have totally flattened... -

Yup, endoscopies are a piece of cake. Nothing after midnight & you will be out for the procedure & it will be quick. Then you can drink, go home & eat & relax.
