  1. It's been close to a month for me. Everyone here was so nice to assure me that crying over smelling KFC didn't make me a complete lunatic. I've cried in the grocery store myself, but I think I have at least that under control now. Yeah, it sucks, is hard and overwhelming. It gets easier, just over a few weeks I've found myself coping a bit better. I know...
  2. Actually, when I add the flour I always let it cook until it's golden brown. Not dark, but a nice deep gold. I find if I don't I do not like the taste at all, too starchy and gross. Probably comes down to personal preference though. It can also be pretty awful if you burn the butter. If the butter gets brown just throw it away and start over, it should get...
  3. Spicy foods and I don't get along since my gallbladder went kaput on me, but my favorite thing to add to perogies was always a little jalapeno and/or cheddar cheese. It's been well over a decade since I last made any but I will definitely put this recipe on my growing stack of things to try out.
  4. So good that I think I'm going to brave making chocolate tapioca pudding sometime this afternoon. You got lucky having such a nice sister, I was never that nice to my little brother. (Then again, he would have told just to see me get in trouble. What a brat.) So nice being an adult and not having to sneak around to get dessert when we want it. It almost...
  5. This was my first and will be my only recipe, partly because it's so similar to what I'm used to. The mustard and parsley are optional and I prefer to just add twice as much pasta instead of adding vegetables. (Nothing wrong with cauliflower but I just don't mix healthy stuff with my mac & cheese.) I also just threw an end piece of my bread in the food...
  6. I haven't had a healthy relationship with food since I was about 12 or 13. I just try to be aware of that and make healthy choices or change things in the house that will help me. I did struggle with depression a few years ago, but since it was following a miscarriage I'm sure it has nothing to do with anything else. I've dealt with OCD since forever. I showed...
  7. I've had issues in the past with eating disorders. My worst enemy is having snack food in the house at all, as I will compulsively eat anything I can get my hands on, hungry or not. For me, simply being aware of the problem and keeping snack foods either out of the house or where I can't find or get them is all I need. For a lot of people though, counseling...
  8. I bought the box of tapioca that's by the jello and such in the store, so it has some soy something or other added to it. I'm not sure the same recipe will work with other tapioca since the stuff I have is the Minute crap. I figured I'll master the easy way, then figure out the real deal later. I just followed the directions on the side of the box. If you...
  9. I have managed my first successful batch of tapioca pudding! I screwed up a fair amount before I got it right. So for supper? Pudding and fruit. Probably not the healthiest thing in the world, but I'm far to interested in that pudding to make it wait for dessert.
  10. I think I use rice flour in my mac & cheese sauce, not totally sure though. I've never microwaved it though so not sure if it would be any better. I'd just try Velveeta. Add a couple of tablespoons of milk to the smallest size brick (cut up) and stir very very frequently.
  11. Don't discount Lyme on account of not noticing a rash. My grandmother never noticed a bullseye rash but sure enough after months of suffering so bad she couldn't care for herself let alone her husband a blood test came back positive. A few courses of antibiotics and her symptoms cleared right up. Not everyone gets the bullseye rash and it wouldn't be noticed...
  12. I know that without a gallbladder I have no business using a deep fryer. Last week I found a really nice one on sale though and my husband needed a new one so we just bought 2 so I can have french fries occasionally. I just used pink nail polish to mark the dial on mine and the handle of the basket. After noticing yesterday morning that the new non-stick...
  13. Out of curiosity, do you have your peanut butter and jelly locked up where only you can get them? If you're living with a bunch of college slobs who are averse to kitchen cleanliness I wouldn't put it past them to be using one or both. All it takes is putting knife to bread and back in the jar and next thing you know you're locking the bathroom door and praying...
  14. For bread, after much online research I picked up a loaf of Udi's on my first trip shopping gluten free. It sat in my freezer for a week or two before I got brave enough to try it but once I did I realized I love it. My husband (quite possibly the world's most picky eater) even liked it, said it tasted like bread. Sure, it's like a nice dense wonderful multigrain...
  15. You are my hero! After the disappointment I suffered with cookies I've been scared of cake but that looks heavenly. I did see the recipe for the Pop Tarts but it's more trouble than they're worth to me. I may change my mind after years without them.
  16. I had months to make peace with mostly cutting out fried foods. (stupid useless gallbladder) The celiac thing kind of blindsided me since neither my doctor or me suspected it. (diagnosed by a total fluke) So I may miss chicken nuggets, mozz sticks and onion rings, but there's no point learning to make things I really shouldn't be eating anyway. I made...
  17. I can sympathize with being ridiculously poor and feeling like I'm stuck in this limbo. I'm used to buying cheap processed foods for the convenience and the added benefit of having a ton of spare time (too sick to work) and being able to go nuts with coupons. Basically having to give all that up I find my grocery bill significantly increased, or at least...
  18. OMG! they do look amazing. I could almost lick my monitor.
  19. Unless in my migraine fog I am totally missing something someone else said, no one at all said long term food storage is crazy but I am guessing that you are referring to me. I'm sorry if anyone else entirely misunderstood what I said. I don't think long term food storage is crazy. I simply think it's crazy to stock up on a bunch of stuff you will literally...

    ARCHIVED Properly Arming Myself

As I put my medical history I can remember to paper, I realize that much like you I've been treated for symptom after symptom my whole life. While not recalling a lot of the specifics (and the doctor I had as a child got run over 4 years ago) I remember enough to suddenly realize I've been chronically ill for as long as I can remember. I had problems...
  21. I'm pretty big on the emergency preparedness thing. Our family keeps a pretty significant stock of things that are shelf stable for 25 years. That is something I am not into though, I don't see the point of buying all this crap you'll never eat. I like to keep the cans of dried fruits and veggies around, which are great for soups, casseroles, desserts, pretty...
  22. I keep a box of Cocoa Pebbles cereal bars handy. They're great to grab as a quick snack or on my way out of the house. I keep telling myself I'll make my own Rice Krispies treats but I'm just not up to it lately.
  23. I'm just past the 2 week mark myself. I have found that the Tinkyada pasta is absolutely amazing. Made some mac & cheese and couldn't tell the difference. I've found that a lot of the stuff that is made to replace what I would have normally bought is prohibitively expensive. I've bitten the bullet and stocked up on some soups and such though, sometimes...
  24. I can not recommend a Kitchen Aid enough. Sure, you can live without one but I why would anyone want to? I am so exhausted and weak I can not use a hand mixer. After about 30 seconds I don't have the strength to hold my arm up. Every female in my family has one. No one has ever had to replace or repair one and most have had them for as long as I can remember...
  25. That sounds heavenly. There's something simply magical about velveeta. I'm feeling lazy today so I'll probably just slap some sauce and cheese on one of those crusts in my freezer and finally give them a test run. (They better be good, they cost a fortune!)
