  1. Everything Skylark said should be very helpful. I would just like to add though that while a positive blood test is useful information, a negative blood test is useless. I was diagnosed by biopsy but two separate blood tests came back negative. There is absolutely no doubt at all that I have celiac. After blood tests you may want to discuss with your doctor...
  2. Out of the house today subbing at the college. Brought some leftover chicken alfredo and a rather large slice of coconut pie. It isn't often I have to worry about lunch out of the house.
  3. After two months gluten free I still spend most days feeling like I've been hit by a bus. Everything hurts, I'm exhausted and I'm grumpy. There have been positives, I spend less time in the bathroom and I have mostly stopped the biological gas warfare. I've been taking a wait and see approach to find out what clears up and what doesn't, although I have little...
  4. I had some pretty extensive dental work done on Wednesday and have a lot more to take care of. (Scurvy is fun! Okay, not really.) Anyway, Winco is the only local grocery store that carries my favorite greek yogurt so I went to pick up a large container knowing I wouldn't be up to food requiring much chewing for a few days. They have a pretty extensive bulk...
  5. I love Udi's for grilled cheese and french toast but not so much for cold sandwiches. I just prefer Rudi's for that. Not sure if they're still available but last I looked Rudi's has $2 off coupons on their facebook. I've always been a pasta lover, Tinkyada holds up well enough to make cold pasta salads which would work well for a packed lunch. (I have...
  6. I have a bunny and frankly haven't even bothered to look at what is in her pellets. I simply wash my hands after feeding her. She also gets hay which I have little doubt will have traces of some sort of gluten in it. You can't exactly change a rabbit's diet and getting rid of her simply isn't an option. I sleep in the same room as my bunny and also keep a...
  7. Went out twice this week. On Tuesday I went with my husband to Pizza Pie Cafe. They do an all you can eat salad, pizza and pasta and for an extra $2 you can get a gluten free pizza brought to your table. The pasta was overcooked and falling apart, but the sauce was delicious. I made my husband get a gluten free pizza too so I could have one regular and one...
  8. I fell in love the second I looked at the pictures and can't wait to make these. Although I find myself a sudden fan of Irish's husband because using prosciutto instead of salami would be positively divine. (With the added benefit of keeping my husband away from them.)
  9. I covered myself the first time I went to a movie. I called ahead and spoke with the manager telling him that because they serve hot dogs and many other gluten containing foods that I can not purchase their popcorn. Heck, the box of Gobstoppers I had said they were manufactured in a facility with wheat so I told him that I can't even have a significant amount...
  10. I suppose I have a different opinion than most here and it probably won't be popular. I'm pretty new to this myself and over the last few years have lost most of my friends. My best friend is very understanding and if we go out we plan a place where I can at least get something even if it isn't a whole meal. If anyone else insisted that we meet somewhere...
  11. With my girls I would puree veggies and freeze them in ice cube trays. Then I could pop a few out and throw them into pretty much anything and they never had a clue. Of course, successfully hiding them in a white cheese filling could prove difficult. I suppose cauliflower could work, never tested the flavor of that added to anything by itself. I must have...
  12. I prefer stuffed shells to lasagna. Sure, they're much more time consuming to make but I don't screw them up every time either. Nothing is as disappointing as smelling something amazing cook for an hour just to have it come out bad. Those are the nights that turn in to ice cream for supper nights.
  13. I don't exactly use a recipe but what I make is pretty close to the Wilton recipe. It notes it at the bottom, but you can just substitute shortening for the butter and water for the milk. You could also use any sort of flavoring besides vanilla depending what flavor you want. You may not find a lot of options in the grocery store but baking stores or online...
  14. I don't generally get angry when people don't get it, but I can get frustrated. I find that some things that should be completely idiot proof are what frustrate me the most. "White bread is fine right?" Seriously? Stupid much? I can not figure out how someone can make it to retirement and not know that white flour is made from wheat, did they live under a...
  15. Thanks! My grammy has always sworn by horehound drops but for some reason I totally forgot they exist. They always helped when I was a kid, hopefully they'll do the same now. I am in the U.S. and can probably get myself to a Cracker Barrel in the next few weeks. Although I may just go crazy from the smell of that place, I should probably have grits with syrup...
  16. I wish she lived with us, but no, it's her house. She wouldn't entertain the idea of making these changes in her life and frankly we don't have the kind of relationship where I would be even remotely comfortable talking to her about it. She's still convinced that all of my health problems are because of my bunny. Right now I'm just hoping the test results...
  17. I'd be dead. My husband had an appointment today with his endocrinologist today and I always tag along so I know firsthand what I need to know. Over the last few years he has been having increasing trouble controlling his blood sugar. During this time he has also had increasing bowel issues. Last fall he was told he has IBS. His mother is constantly weak...
  18. I'm still struggling with my sore throat and poor voice that some days makes a rather hoarse appearance and other days is still squeaky if existent at all. The only thing that helps at all is Chloraseptic spray. Whenever I use it though I start belching insanely frequently. I also sometimes get killer heartburn, which I haven't experienced since I was pregnant...
  19. My dad (who is the parent that passed this lovely illness on to me) has spent pretty much my entire life convinced I'm a hypochondriac. I long ago made peace with the fact that he is how he is and although he was never the father I wanted, I have no reason to doubt he loves me. Fortunately for me, I'm 2000 miles away so I don't have to listen to him try to...
  20. For my religion, the sacrament is passed by Deacons. Our bishop assigned an entire section for celiacs because there are so many of us. The first Sunday back to church after my surgery I almost choked on the most awful cracker I've ever put in my mouth. I was like omg, I'm gonna burst into flames if I choke on this. It's unbelievable how many people...

    ARCHIVED Indiana Pa

Long ago I worked at a Hoss's. I highly recommend them as their food is amazing. They do focus on a salad and dessert bar, as well as self serve fresh baked bread but can say that in the particular restaurant I worked in we were beyond careful to be sure each item prepared for the salad bar was not contaminated by other things. Even if you skip that salad...
  22. I love my crockpot, I get amazing "home cooked" meals without really having to do anything. I throw in some meat and veggies and end up with enough food for days. I also keep precooked bacon on hand. When I want a quick easy breakfast I fry up an egg and microwave some bacon which takes all of 3-4 minutes. I picked up a relatively cheap rice cooker that steams...
  23. Those cupcakes look absolutely amazing!
  24. I was planning on cooking until hubby decided we were having pizza. I called and ordered scared that I was about to have the worst thing I've ever tried to eat. I barely made it to the car with my box of pizza before I couldn't stand it and tried a slice. I almost died it was so good, it tasted just like pizza! I kind of ate the entire 10-inch pie and...
  25. While feeling a bit more spry, I wasn't up to any real baking. I just used the gluten free Bisquick recipe. The texture is different than what I'm used to in a coffee cake but I find if I knock off that expecting what I used to have and accepting that it's different now I enjoy things for what they are. I'll bet my husband wishes it were the most quiet...
