You should really ask your Dr. for a referal to a nutritionist. He obvioulsy hasn't given you any direction regarding your diet. I definatly think that celiac disease can go through phases during your lifetime. Not neccisarrily just improving during teens and 20s. I was fine as a child. Your recipe sounds really good too! I like the taco seasoning idea! I'll have to try it! Texture was always my thing about the gluten-free meatloaf. There is something about our bread that isn't as absorbant as regular bread. Try the rice and mashed potatoes thing.....It was really pretty close to a normal meatloaf texture!
