  1. Thanks all!! Floridanative - that all checks out with what I know. I only had the blood tests done which is the norm. at 6 months. They will not do another endoscopy on me for another year to 2 years. U of C is giving you correct info.
  2. I'm so excited right now. My inital numbers 6 months ago where through the roof with total viloscophy. They only did the blood tests (obviously) so I don't know what state my intestine is in yet, but my doctor just called with my blood results after being gluten-free for 6 months, and she said they are almost at a normal level.   3. Actutally this was on a plane ride from NY to Hawaii. I've been to Europe but pre-dx. I've heard that a lof of the European countries are much more accomodating. I'd love to find out.

  6. Hi, Laura is correct! I just got married this past October. I started planning my wedding in September of '04, and was diagnosed in June of '05. Obviously this means that I no longer had the flexibility to find options where I could choose my own caterer who would specialize in gluten-free food.   9. I always see posts of people who either gained a ton of weight or lost a ton of weight after becoming gluten-free, but did anyone just kinda maintain their same weight without really trying? When I first started eating gluten-free (The first 4 months or so), I lost maybe 8 lbs., but for me any weight loss is a lot because I'm really thin to begin with...

I've had this a few times now but I'm sitting here have a piece of the Whole Foods Bakehouse gluten-free Carrot Cake with Duncan Hines Cream Cheese frosting on top and I just wanted to share how awesome this is. If you ever where a carrot cake fan you have to try this. You would never know it's gluten-free!

  15. LOL!!! We have an extensive cafeteria at work with all sorts of stations (stir fry, salad bar, sushi, omlettes, sandwiches, grill, international table, etc). Whenever I go down there I always say I'm gonna go graze.

  18. Definately a tough one and depends on the situation. I found the toughest situations is when it is a party. Sometimes I'd rather not eat than risk getting sick. And people think I'm just being polite and don't want them to go out of their way, and I just can't make them understand that they really don't have to go out of their way because no matter what...

  21. You can find Amy's in just about any supermarket - A&P, Pathmark, Stop & Shop, etc. I love the bean & cheese enchiladas. Ok this is so random because I was also just thinking about 2 days ago how great it would be if I could still have a Samoa (not sure if that's how it's spelled but it's the one with the coconut).
