  1. insomyr- welcome to the board! there are many people who are not necessarily lactose intolerant, but until their bodies have healed, they have trouble with dairy. Once they are 100% gluten-free and their intestines have fully repaired themselves, many have no problems with dairy. Personally, if I have accidental gluten, then I can't eat dairy for a couple...
  2. or is there any chance that you have had minor, minor amounts of gluten (i.e., through cross contamination, etc?) the only time I get symptoms is if I have been 'glutened.' Hope you feel better!
  3. Jersey-I am increasingly more sensitive the longer and longer I'm gluten free. I get hit like a brick with the tiniest amounts. I originally hoped that I would grow less sensitive, too! I have some of the 'safe' oats---have yet to try them. But I am excited too!
  4. I like "combinations" of flour best. I have used the recipe in Bette Hagman's gluten-free cookbooks, as well as Bob's Red Mill (pre-packaged).
  5. Girl, I hear ya. It is frustrating. I think we've all been there. It takes me up to 2 weeks to feel 'normal' again and I can't eat dairy for at least 2-3 days after I've been 'glutened'....dairy makes my life much worse then! There's nothing that really helps me other than just waiting it out. I end up trying to sleep more, and it makes me all the more...
  6. My guess would be that you are still healing. It didn't matter what the heck I ate (all gluten-free) when I started the diet, I just felt like crap from being sick for so long. It took me a few months to feel somewhat normal. I remember I would eat very simple, plain things and then freak out because I was still feeling awful. If, after being super gluten...

  9. I'm pretty simple...I use the bob's red mill gluten-free bread mix, and bake it in the oven. Turns out wonderfully (this coming from someone who is very very picky about gluten-free breads).
  10. Let me just say this..... After reading all of your stories, you are all AMAZING. I give you all a lot of credit for going through these "family" issues......AND having Celiac. Lis, I'm not sure what the answer is (probably some combination of all the great advice mentioned), but keep us informed. I am thinking about you and hoping for the best.
  11. Chrissy-when I was diagnosed (2004), I was living in a small town in Alabama with no "gourmet" grocery stores either. I shopped almost 100% at the Kroger and ate many of their products.   12. I use the McCormick's taco seasoning packets (I think the less sodium, regular, and mild are all gluten free). I used them before I was diagnosed, too! We do "nacho night" at our house too, and love it! Enjoy!

  14. I've only been to Orlando once since being diagnosed. It was my first 'gluten-free' trip and I must say, I was terrified at the time! They do have a PF Chang's (it was my first experience ever at PF Changs....and now I'm an addict!) Like Jen said, I would bring the mini-salad dressings (I think the ones I have are hellman's?) that are gluten-free so wherever...

Have you found any good places to eat out up there? When we are home, my mom obviously cooks big gluten-free meals for me, but I would be interested if you knew of any good places...
  16. chuikov---you live very close to where I am from! I graduated from Cumberland Valley HS. During college summers, I used to waitress at the Applebee's in Mechanicsburg on the Carlisle Pike. (That was pre-Celiac, needless to say!) We were just up there for a couple days after Christmas and had a great time. My mom is a UGA grad so I'll be rooting...
  17. Oh, ryebaby, I'm so jealous! I would love to live up there! My parents live outside of Harrisburg and my sister is a junior there, so at least its relatively easy to get up there when I'm home. I get frustrated when I don't make the time to make something safe, healthy, and delicious to eat and I get stuck eating something I don't want to bc our options are limited.   20. I was just interested to see if there were any Penn State alumni, students, or fans that are Celiacs and on this board!!! I am an alumni (2002) and will be watching the Nittany Lions win (on TV, won't be in FL, unfortunately!) on Tuesday over FSU! Let's Go State!
  21. Although the name is misleading, MSG is safe for Celiacs. I have heard many bad things about MSG, but like mentioned above, it is gluten free. I eat products that contain MSG.
  22. Most commercially made soy sauces do have wheat in them. I used to get sick (before diagnosis) when I would eat at Japanese steakhouses that drenched their food in soy sauce-no wonder!!! La Choy is gluten free but a lot of people aren't fans of it. I think that Tamari is gluten-free as well. I think that the Kroger generic brand is gluten-free also.
  23. I use Progresso's Creamy Mushroom soup also....I heat it up, add 1 tbs gluten-free flour to thicken it. My mom made me green bean casserole and it was delicious!

  25. If I have been accidentally glutened, I stay away from lactose, etc. It makes life MUCH worse for me! But, when I am healed, I eat cheese, ice cream, drink milk, etc. and have no problems. It makes sense---I read here on that when gluten is in our intestines, it damages the villi, part of which is the enzyme "lactase," which is on the tip of the villi....
