Just looking at the intestine does not diagnose Celiac. The biopsies do. So yes, you can "not" see it and the biopsies are positive. You'll need to make sure that your doctor took 4-6 biopsy samples. Modified food starch is safe unless is says Modified food starch (wheat). There is a lot of outdated information out there. Since you have only been gluten free for a short period of time, chances are, your body hasn't healed yet. If the cheese was safe.... You may be: 1. temporarily lactose intolerant 2. "reacting" to safe foods, because your villi haven't healed and you can't properly digest/absorb. Damage wasn't done overnight, and doesn't go away overnight.

It depends on if you want an official diagnosis. If you want an official diagnosis, you need to keep eating gluten and get the blood tests run. If you don't want/need an official diagnosis, go by the dietary response. There are pros and cons to both. You can always go gluten free after you have the testing done, regardless of the results.
