I would be concerned that your doctor isn't up to date on Celiac, though, since he didn't run the "best" tests, nor did he suggest a biopsy.   13. Research seems to indicate that you need to be eating gluten for longer than a week. If you are going to still do the procedure, I'd eat a whole heck of a lot of gluten (more than four slices of bread per day!) I know it may make you miserable, but there isn't a point to the procedure unless its done correctly. You will have a higher risk of false negatives...
