  1. Like Karen's link pointed out, oats can cause an autoimmune reaction (like a glutening) in a minority celiacs. I don't think it is because of a molecular mimicry but because the protein in oats triggers the reaction just like gluten...Oats don't have gluten but it has avenins (sp?) that can bother us.   2. I would just give it time and it will slowly come back on. Eating more should help. As for cholesterol, it has been proven to me a myth (from what I have learned) that dairy, fats and eggs raises your cholesterol. It is actually the processed foods (flours/starches and sugars) that end up raising cholesterol in the end.
  3. LOL! Ooooh! I like you! Cookies cookies everywhere and nary a crumb to eat. Bring yourself a thermos of Balieys with a bit of flavoured coffee or extra creamy hot chocolate - it might make you feel better, and if you drink enough you won't care anyways.
  4. I think people like to have a diagnosis because it makes it "easier" to stay gluten-free. Knowing you can't cheat, once or ever, helps some people stay completely gluten-free compared with those who "think" they should be gluten-free. For example, I know that sugar does bad things to my body but I have a hard time staying away from it; staying gluten-free...
  5. LOL I always wondered why dog food has gluten added. I just can't see dogs in the wild harvesting grains to eat. KWIM? Meat, fruits and veggies - yes. Grains? Not so much.

  10. I had arthritis like symptoms, that would come and go, which sounded a lot like that. I would get fatigues, flusih, and then it would hit for a few weeks to months. It would get pretty severe to the point where scissors and pens were pretty hard to use and there was very little strength in the affected joints. It got better gluten-free but it was my symptoms...

Those are the ones that appeared low in the results you posted. If they are indeed low, your only testing option is the endoscopic biopsy because the blood test results will be (possibly falsely) negative...
