ARCHIVED Fresh Coconut
FruitEnthusiast replied to FruitEnthusiast's topic in Gluten-Free Recipes & Cooking Tips
I never thought about that. I usually think of excess water as a bad thing which is true for storing something like lettuces or cucumber. But that's a great idea for cut fruit and some cut vegetables too. Jicama is a good example. I appreciate this tip so much as I eat more produce than anything right now. Do you know anything about storing fruit and... -
ARCHIVED Fresh Coconut
FruitEnthusiast replied to FruitEnthusiast's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the tip, it did seem a little dry when I had it today -
This isn't exactly a recipe, but I bought and cracked open a fresh coconut tonight. If you've never tried it, and can tolerate it, there is nothing like eating coconut fresh, right out of the shell. It stores well in a container in the fridge. My grandmother used to have it when we would visit her. It's a food that I've reintroduced successfully, and I don...

ARCHIVED It Was Supposed To Be Over At Gluten Free! Help :(
FruitEnthusiast replied to AnnaChristine18's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I can't imagine dealing with this when I was 17, it must be so hard. It's true healing time is supposed to be shorter the younger you are. I have usually heard 6 months is the minimum time to feel better. I think it's really too soon to be concerned about any other complications you might have. What you are experiencing is very normal at this point. It...- 88 replies

ARCHIVED It Was Supposed To Be Over At Gluten Free! Help :(
FruitEnthusiast replied to AnnaChristine18's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I don't know if this helps but I just wanted to say that you're not alone when it comes to being sick enough to have to stay home and deal with being kept from doing the things you used to be able to do out in the world. I'm in the same boat and it is so frustrating. Just know that this is a temporary phase of your recovery. You will bounce back and be...- 88 replies

I don't have experience to share but wanted to say that I'm so sorry to hear you're having these struggles right now. I definitely know what it's like to feel like the challenges will ever end. Please try not to be hard on yourself. It's not your fault that you're sick. It's easy to go down that road wondering what if I had done this or that differently...

ARCHIVED Yeast Sensitivity - Experience With This?
FruitEnthusiast replied to Waitingindreams's topic in Food Intolerance & Leaky Gut
This is another perspective you might consider. I have been sensitive to mold in foods for years. As far as I know there is no test you can have to find out if it's an issue for you, not even an Allergist can test for it. Yeast is one of the many things a mold sensitive person will have trouble with as well as any fermented, cultured, or aged foods. There... -
ARCHIVED 2 Years Later And Still Dealing With Major Symptoms...
FruitEnthusiast replied to luvrdeo's topic in Coping with Celiac Disease
I have also been gluten-free for 2 years, but I'm not better yet. For me other food intolerances have been as big an issue as gluten. I think someone mentioned that they are grain free. I could not tolerate any grains or processed foods from the start. I know there are others who have had the same problem. I don't know if a Naturopathic Dr. or someone... -
ARCHIVED Some Probiotics Can Increase Histamine
FruitEnthusiast replied to FruitEnthusiast's topic in Food Intolerance & Leaky Gut
I've seen a huge difference going low histamine. The allergy-like symptoms have improved, I see positive changes in my digestion, and my joint pain is better so I can sleep more comfortably again. I have more foods to choose from now, so it's easier. I'm on the right path, getting better, and moving forward -
ARCHIVED Mourning My Loss?
FruitEnthusiast replied to ashleyld's topic in Coping with Celiac Disease
So sorry you're having more difficult news on top of what you've already learned I remember feeling relieved right at first to know what was wrong, then pretty quickly that changed into feeling completely overwhelmed with the changes I would be facing. It can really hit you like a freight train. The practical part of making changes, all the new information... -
ARCHIVED Some Probiotics Can Increase Histamine
FruitEnthusiast replied to FruitEnthusiast's topic in Food Intolerance & Leaky Gut
Hmmm… I'm not sure, but I get the idea you feel strongly about this I wanted to share what I found but I was careful to state it as something I read, nothing more. I'll leave it to you to determine whether there is truth in it IH. I first read it on the Low Histamine Chef website. I originally came across it when I clicked on the link about h... -
ARCHIVED Margarine Tubs

Glad to hear that, and to learn about a new product I hadn't heard of before. Thanks! -
ARCHIVED Mourning My Loss?
FruitEnthusiast replied to ashleyld's topic in Coping with Celiac Disease
I can completely relate to how you feel, and your three year old too. It's a painful adjustment for any age. She's so young though, after she adjusts, it may seem like just the way things are. She won't have many years of forming habits to combat. I'm not downplaying the difficulty of the adjustment stage at all, but her age could really work in her favor... -
ARCHIVED Margarine Tubs
FruitEnthusiast replied to BlessedMommy's topic in Coping with Celiac Disease
This isn't really the question you asked, but it's about margarine so I wanted to mention it, since a lot of us can have issues digesting things. I read that margarine is so highly processed (hydrogenated and what not) that it's not really even a food anymore, and if you set a tub of it outside, unrefrigerated, it won't change at all over time, and that... -

ARCHIVED Some Probiotics Can Increase Histamine
FruitEnthusiast posted a topic in Food Intolerance & Leaky Gut
For those of us who suffer from histamine related issues, I wanted to pass along this info I read about probiotics. I found this info on several sites. I read that some strains of probiotics can be histamine producing: Lactobacillus casei, Lactobacillus Bulgaricus, and Lactobacillus reuteri. I have the first two in the probiotics I've taken for over a... -
ARCHIVED My Histamine Journey
FruitEnthusiast replied to FruitEnthusiast's topic in Food Intolerance & Leaky Gut
I just found this information in another thread about dealing with anxiety: "I found a book by a chap called Paul David which helped me understand anxiety better and it gives advice on recovery. He also has a website. Thing is, he explains that setbacks can occur but that doesn't mean you are back to where you were. That helped me because there were... -
ARCHIVED My Histamine Journey
FruitEnthusiast replied to FruitEnthusiast's topic in Food Intolerance & Leaky Gut
Ok, I'll send you a message with what I can eat. I have six safe foods. If I had twenty I'd be jumping up and down instead of losing my mind. I don't have enough protein sources or any starches. -
ARCHIVED My Histamine Journey
FruitEnthusiast replied to FruitEnthusiast's topic in Food Intolerance & Leaky Gut
Well, I took out all the high histamine foods that I was reacting to and started eating only low histamine foods 2 1/2 weeks ago. I had to change almost every single thing I was eating. Now I'm left with too little to eat. I have to add something else into my diet to be able to sustain myself. I don't have enough substantial food to keep me going. Since... -

ROTFL - not too many people know this one, but it's great when LOL doesn't quite cut it. Rodents are way too crafty and relentless! Mmmmmm... bacon, yes! By the way, I love that little guy running back and forth at the bottom of your signature, cracks me up every time. Thanks IH -
ARCHIVED My Histamine Journey
FruitEnthusiast replied to FruitEnthusiast's topic in Food Intolerance & Leaky Gut
This is a good reminder that stress reduction has to be a priority, as much as the food choices we make. I think "we" all tend to talk about stress and it's consequences, for about a minute, then go back to doing whatever crazy thing we were doing before. I'm taking note of the sources of stress in my life and how to reduce them, one by one. That's new for... -
ARCHIVED My Histamine Journey
FruitEnthusiast replied to FruitEnthusiast's topic in Food Intolerance & Leaky Gut
It's all good Lisa Thanks for your help! Thanks Colleen! Yes I have been on the lowest histamine foods for two weeks already thanks to a great food list from GottaSki (thanks GS). I started to feel better right away and most of my symptoms have gone. Good reminder about exercise, even when I don't feel up to it, I'm glad I did it afterward. Thanks... -
ARCHIVED Dao Enzyme Testing
FruitEnthusiast replied to FruitEnthusiast's topic in Related Issues & Disorders
So sorry IrishHeart if I misquoted you. I think that must be my brain fog. Seems I have trouble remembering things correctly sometimes. I'll be more careful about that in the future. Thanks so much for your response! Glad to know about DAO testing and supplements, I won't waste energy thinking about that anymore. It's good to know your GI was encouraging... -

I really don't feel (in my gut) ha ha, that I have a Mast Cell issue. The symptoms are way off. Think positive with me, pleeease GS! -
ARCHIVED Dao Enzyme Testing
FruitEnthusiast replied to FruitEnthusiast's topic in Related Issues & Disorders
I thought I saw something written by IrishHeart that she had the test and is taking the enzymes, which by the way are not easy to find so far. Couldn't find the thread and would love to know anything about about this. I don't think my Allergist had ever heard of it. Where's the mighty warrior princess IH???
