I'm sure everything's been looked at already but I thought I'd mention that an overactive thyroid can cause those manic type symptoms. Restlessness, anger, mood swings, compulsive behavior, excess energy, sweating, panic attacks, etc. If he hasnt had that checked I'd look into that too. I actually dont know if I have a yeast problem or not. I just figured with no good bacteria in me and eating lots of sugar and carbs...well wouldnt that give yeast a chance to take over? Personally, If I was casein intolerant I wouldnt take the test. I've taken lots of tests but never bothered with the leaky gut test because its pretty obvious I have it. I don't know if I understood your question. Antibiotics work to kill off bacteria. Unfortunately antibiotics cant tell the difference between good bacteria and bad bacteria. They will wipe out all the bacteria even the stuff that BELONGS there and has a purpose in keeping us healthy. If we kill off all our good bacteria (probiotics) there is nothing... -

I've made home-made yogurt a few times. It was a little easier than what was just described but for the most part similar. I didnt use gelatin and my "starter" was store bought organic yogurt. I let mine ferment for 3 days though...which was the part that really sucked. I would eat it all in one day but have to wait 3 more days to have more. -

I'm not CF so I've been eating organic plain yogurt the past few days + taking the probiotic supplements. I do have a yogurt maker and I used to make my own w/ organic milk or sometimes I used goats milk. I guess I'm being lazy now because I'm just buying the store kind. Do you think homemade yogurt has stronger probiotics or does it make a difference... -

Before I ever got sick I rarely ate chocolate or candy. I never was that crazy about chocolate. When I did get sick and was undiagnosed for 3 years I ate tons of chocolate...I had to have it. For this reason I would not only like to see the words GLUTEN-FREE but also MADE IN A DEDICATED FACILITY WITH NO CHANCE OF CROSS-CONTAMINATION 100% GUARANTEED. THAT would make me really happy. I actually have some stevia. I had forgotten about it. Its a little bitter but better than nothing I guess if I really need a "fix". I used to put it on my flaxmeal cereal...but I kept getting contaminated by the flaxmeal and of course the entire time I blamed it on the stevia and stopped using it. Kept getting sick from the cereal though...sometimes it takes... -

For now I don't eat anything that says its processed in a facility with wheat. I had the same problem as Carrie with Bob's Red Mill Flaxmeal and also buckwheat flour....both labeled gluten-free. Because of cross-contamination I dont think I've ever been totally gluten-free yet. I've been glutened numerous times the past few months and now I'm going to stick... -

I could never see myself as a "granola"....I LOVE junk. Too bad my body is forcing me, against my will, to learn to eat healthy. I've turned over a new leaf...BUT....you wont see me hugging any trees....yet. -
I dont really know if I had any symptoms previously. If I did...they were insignificant to me. I did develop autoimmune thyroid disease 4 years earlier though. My symptoms started right when I quit smoking...I was also going through a very stressful time.

For some reason your description had me laughing. It sounds easy...I can totally make a pie like that. I did something similar last year (when I was trying to be gluten-free/anti-candida) but without the crust. It was more like I just plopped the Libby's pumpkin into the pan, mixed in some cinnamon and baked it. I cant say it tasted too much like pumpkin... -

Personally, if I were in your shoes right now I would try the diet regardless of the test results. Many people here can attest to the fact that the diet is the most accurate and foolproof test of all. Not everyone gets an "official" diagnosis...not everyone has positive bloodtests. I didn't. It did not mean it was OK for me to eat gluten. I continued to eat... -

Welda, Thanks for your message. My dinner was excellent. I had a salad, yams, turkey, green beans, corn bread and of course my little chocolate cake! I was wondering about jello....they had some there and thought of trying it but wasnt sure if jello was gluten-free and also was worried about contamination. I don't think there is an "ideal" age however, I believe testing under the age of two is less accurate. I agree with the other posters...having everyone eating gluten-free would make things alot easier. -

I agree, I think more Celiacs would come back with negative (or non-positive as you put it ) biopsy results than positive. I think this is another reason so many are left undiagnosed. The tesing is just not good enough yet. The biopsy should not be considered the "gold standard" anymore. IMO. -
