  1. i understand. if i wasn't allergic to rice and buckwheat, as well as casein/egg free, i might opt to try something, too.
  2. NicoleAJ - I would be careful about first readings of MRIs, my sister (and many other people) have gone undiagnosed (well, misdiagnosed... we knew it was MS) for awhile ... In my sister's case, 11 years (she is 26 now). anyway, good to hear either way! about the stretches, if you're interested, i can talk to my mom and see if i can describe them to you...

  5. i have to agree with the people saying that it isn't expensive... i mean, celery and peanut butter and tofu cost me the same, no matter what as for flours, xanthan, and so forth... it might be 10$ for xanthan gum, but you don't use very much and it lasts a long time. the flours are the same price, unless you were to buy simple, refined flour. cereal...
  6. HAHAH! My eyes are the same for seeing far away (IE my glasses are fine), but my close up stuff is getting oddly better. wozzy - that's good news! unfortunately, that wasn't my situation, otherwise i'd be more hopeful.

  9. i'm sorry, i dont remember the product, but i had something that said modified food starch (that's all), and in the french ingredients it say maize/riz (corn, rice). I am allergic to rice, so I called, and they said they use a mix. so it was rice based, too. still safe for most, but i wanted to add that in.

  14. Hi there, On my website, i've made all of my baked goods (including both breads) with egg replacer as opposed to eggs. When I make them for the other gluten-free people in my house, I use eggs so i can save the egg replacer for when I feel like eating it, too.   16. i agree. i have celiac, my mom has ms, my sister has MS, my mom's mom has hypothyroidism and fibromyalgia, my mom's sister has hypothyroidism and MS, and my mom's brother has iritis. definitely connected.

  18. It could be MS, yes. I am quite MS savvy, as I've grown up with it with three immediate family members of mine having it (I don't). However, my whole life I have had neurological symptoms (including what you've described), and had numerous MRIs, and so forth. I don't have MS (yet! ha), but my symptoms mimic a lot of them. It wouldn't hurt to get tested...
  19. i make a smiliar one with nutritional yeast in addition to those ingredients and with no garlic (although i would, i'm just allergic to it). the nutritional yeast is a powerhouse food, and you don't need to thicken it up with flour - it does the job. gives it the parm cheesey taste sans parm.
  20. my GI, internist, and allergist all said that prick tests for foods are only 50% effective. (not for environmental, that was 97% or similar).
  21. it depends on what it is being used for in the recipe... agave nectar is a good replacement (all natural with a low GI). in all of my recipes, I always only use 1/3 of the sugar is calls for anyway, and replace that with honey or sucanat (pending what the recipe is).

Like CarlaB, I am casein intolerant with symptoms that are similar to gluten intolerance, except also with casein my brain fog comes immediately, and I generally lose most feeling in my legs. justme- I had cut out lactose first, and realized soon after eating anything lactose free but not casein free, that it was casein. that is how i initially determined...
