I don't want to start a soy debate here, but my favorite gluten-free / CF / NF (nut free) comfort food is soy based!!! They are the "Purely Vanilla" ice cream bars. This is the closest thing to a "Dove bar" that I have found Open Original Shared Link I eat these by the box! -

I LOVE THIS PLACE!!!!!!!!!!! I actually live about 20 minutes away and try to get there for goodies whenever I can!! These people are great. Giant Eagle semi-sweet choco chips are only available at GE stores (midwest chain) Enjoy Life Foods choco chips are in a lot of stores, but I can't tell you which ones...sorry! -

cocoa butter is not a milk ingredient! Giant Eagle brand chocolate chips are gluten-free/CF, and nut free too. Enjoy Life Foods has gluten-free/CF chocolate chips as well. We buy those and melt them down to make our own goodies! -

Basically you swallow a large pill sized camera with lights and all, kinda space age! then you put on a vest with wires and recording equipment. Bummer! I know nothing about military insurance. I would ask them if the military provides this type of testing, and if a military doctor ordered it, would it still be covered??? I woul expect that if a doctor in their plan ordered the test, it wouldn't matter what lab it came from! My insurance company told me that they would *not* cover the testing.... -

the "gold standard" is positive serology with positive intestinal biopsy. These methods are extermely old, and as we celiacs know, they are not that accurate unless your disease is progressed! I happen to audit IT systems, and perform security analysis and testing for an audit firm, so I know a bit about this subject! I think it is just as risky to give your credit card number to someone over the phone. Think about it, your phone conversation can be interecepted! Hey, we must be related, I have the DQ3 gene as well.(Along with the DQ2 gene) To answer your questions, yes gluten can cause an iummune response in you, and hence damage. As milk and wheat are some of the most common allergens, I checked with the Food Allergy and Anaphylaxis Network (FAAN http://www.foodallergy.org) regarding this. They didn't address the wheat issue, and I have written them back on this. They do have some insight into the casein issue though: when I get back from them about wheat I will post it....
