  1. I had my endo scope today and my dad has celiac, we asked how my villi looked and the doc repied it looked ...

    relatively normal villi, so I am going to assume it looks fine.

    Could you have celiac with normal looking villi??

    I would expect that it would depend on how quickly a person was diagnosed. A biopsy can also be a determination of Celiac.

  2. Wendy's fries are gluten free IF they are cooked in a dedicated fryer. Some restraunts have them, some don't. But the fry is potatoe and they use vegetable oil.

    But I don't think that Wendy's is particularly known for their dedicated fryers. I enjoy their chili and baked potato and some salads. They have more of a selection than most fast foods.

  3. I researched Wendys and found that their chili,baked potatoe with sour cream and chives,and baked potatoe with broccoli and cheese are gluten free.Their fries are also gluten free.I also love their low carb burgers,which is a burger without bread.

    Hummmmm.........not too sure that Wendy's fries are gluten free. Better look that one up again because we don't want to be responsible for false information and someone gets sick. ;)

  4. Yeah that is true. I guess sometimes you just want to have some "evidence" that there really is something going on.

    So they can't tell you if you have celiac but would the panel give you an idea of the likelyhood it's celiac vs just an intolerance? Is a biopsy the only way to absolutely say it's celiac or not. If it's just an intolerance....can people tolerate little amounts of gluten without a problem? If it's just an intolerance would they have to pay attention to labels as much as a celiac patient would? Such as making sure there's no cross contamination.

    Enterolabs can test for sensitivities, such as wheat, soy, dairy...etc. They cannot diagnose Celiac Disease. They do gene testing, but I understand that there is a lot of research going on about that.

    Gluten sensitivity/intolerance and Celiac Disease are very similar in symptoms, although Celiac Disease will generate the autoimmune response which will destroy the small intestines with an encounter of gluten. Gluten sensitivity/intolerance does not create damage, and it is often said that it may be a precurser to Celiac.

    A total gluten free diet required for both.

    Have you considered having your husband return to the gluten diet for several months, and then have a blood test for Celiac through your primary doctor. It can be easily handles in his/her office.

    Yes many of your symptoms are those of Celiac. My Celiac was triggered by stress. The worst of my symptoms occurred in one day.

    I noticed that you said you were "wheat free", perhaps if you were "gluten free" your symptoms may improve. But then, if you choose to be tested, as said, you must consume a gluten diet.

    Your "wheat" intolerance may have been triggered by your stress into Celiac.

  6. Hello All. I have celiac disease. I am gluten free. My 5 yo dd has been complaining of stomach pains very frequently. I see no exact pattern yet. She is also VERY dramatic...sooooo. I am not sure if she is faking. Today she ate some chicken nuggets and begged to leave the place that we were bcuz her stomach hurt. So I am starting to believe her. I have never seen diarrhea, But she has been constipated once recently. So I have a 2 part question....

    1) Is there a way to stool test her AND file it with insurance (not have to pay upfront). My dh is an optimist and sees no reason to test her so he is not willing to pay for the test when we have insurance. I have avoided the bood draw due to her EXTREME fear of needles.

    2) Should I just make her gluten-free???? I thought of doing it now while she is on break...BUT it is CHristmas!!! So many parties are coming up... We will have gluten-free Christmas dinner at home though :)

    Enterolabs can do stool testing and test for sensitivities and it is not covered by insurance that I am aware of. You daughter does not like needles. So.....that leave only one option left.

    Try her on the gluten free diet. I would not start her during the holidays (unless she is in pain or discomfort). Start her when she has a routine.

    Hope you have your anwser soon.

  7. Joe, I'm off to work, so excuse this brief reply.

    Until you intestines begin to heal, you will have symptoms such as a reaction to gluten whenever you eat ANYTHING. Your system is damages and it will take some time to recover. Gradually, with diligence, it will improve.

    Don't know about the sugar and diarrhea and sprinkles.

    Your itchiness and sores may be signs of DH (Dermatitus Herperiformis) Having it is alone is a diagnosis of Celiac.

    Yes, you can typically swing from diarrhea and constipation. It is not uncommon.

    Keep the faith, you will improve!!!!

    These cookies are being sold through the schools "For Your School Fundraiser" Magazine and Great Stuff to Eat and come in the following:

  9. Almost, I have a few gift cards to buy and I need to finish adding the last 25 or so ornaments (out of about 200) to the tree.

    Two hundred ornaments! Wow, Phyllis, I would love to see you tree. Bet it's beautiful.

    I'm' done (and if not, I called it quits) except for the cooking. We usually pot-luck for Christmas Eve and Christmas Dinner.

  10. Is jello gelatin gluten free? I looked at the ingredients and did not think it contained gluten, but now I am wondering because my daughter is acting like she has had gluten. We also try the blue diamond nut crackers ranch flavored, now those have milk and she does not really tolerate milk well, so it may be this, she loved these and has begged me to buy more, but I don't think I will.

    Jello is infact gluten free.

    On the other hand, Blue Diamond Crackers, if you look at the box, I believe it says that is "is processed on a facility that processes wheat..." There might be a cross contamination issue with the crackers. They have never bothered me.

    Milk products may also be an issue if she is in the early stages of healing.

  11. we all know there's millions of them, but what do you need to look out with them? some people say too, but i don't get exactly what could be a risk...any certain ingredient that's a no-go?

    You need to look for McCormick Spices. They will always list any form of gluten if included in the ingredients. Certain things to look for, as in anything else, would be wheat, rye, malt and barley.

  12. My turn to stray from the Silly.

    Got a Christmas Letter from SIL Pam yesterday. She was married to my older brother, Pat, who died somewhat suddenly in July '06.

    One bit of news evoked a combination of sadness, pride, & maybe a dozen other emotions I can't think of names for right now. Overall more heartwarming than heartwrenching tho.

    Pat was an Alaska State Parks Ranger and had been Chief Ranger at Hatcher Pass Rec. Area & Independence Mine State Park.

    Quoting Pam - "Also in June, I met w/ Alaska State Parks who asked my permission to name the ridge above Independence Bowl 'Murphy Ridge'. This was such a perfect idea because it oversees the whole valley that was Pat's passion!. Ranger Dan and I also located a beautiful site for a bench that will be installed in Pat's honor next summer using proceeds from his memorial fund."

    Welcome to the forum. It looks like you have done your homework.

    Celiac has over 200 symptoms and untreated Celiac can lead to unfortunate diseases such as stomach cancer as well as many others.

    Regardless as to what your blood work might indicate, the bottom line is that you feel better going gluten free. That in itself is somewhat of a diagnosis. The blood work in not known to be 100% reliable. The blood test can rule Celiac in if positive, but it cannot rule it out if negative.
