  1. Armetta is still a bit under the weather. So, she has asked me to convey to all of you for your time and your thoughtful letters on behalf of Lynne and Dave, with hopes of a successful Home Maker Over.

    Every letter received, was a letter of true heart, compassion and generous in spirit. We are truly a family here. A family that Lynne and Dave can know through the simple gifts that we can bring to them through our simple words.

    With great spirit and a lot of luck, perhaps this dream can happen.

    Armetta, would like me to thank Laura for her willingness, progressive spirit and a sweetness that we would all want to grab on to. Lynne for her strength, her compassion, and her deference to others while she suffer in silence. (talked to her tonight, and I have to add her humor) :D

    With good grace, perhaps this will happen and Lynne may have a home makeover. On behalf of Armetta, who began this thread, I (she) wants to let everyone know that it has truly touched Lynne and Armetta as well, how wonderful you have all been. Your letters were truly a gift.

  2. Momma, does the addition of the cream cheese cause the casserole to "thicken" or is it necessary to add some gluten-free flour also??

    I have tried for three years to make this dish and every year, I screw it up...LOL

    Everything else comes out great, but this is my achilles heel of Thanksgiving...

    Also, should the cassserole be covered in the oven? I plan on cooking the bacon, sauteeing the garlic and onions. Then I plan on adding the bacon, mushrooms, onions and bean mixture in a casserole dish. Add in the soup/cream cheese combo and then bake.

    Is this accurate?

    Confession here, I have not tried it that way. But, hold on.......Progress is not condensed so it's watery. So if you use less and add the cream cheese it will be less watery. So you found some other soup...Healthy Valley, can't find it here.

    Just mix every thing you want to have in a BIG bowl and judge you size of dish to put in the oven. Make sure to PAM the pan before you dump everything in.

    How many do you want to serve?

    For eight, I use three frozen green beans thawed.

  3. This is easy:

    Buy frozen french cut green beans, rinse with warn water to thaw, drain well.

    You can use Progresso Much. soup, but not the whole can, mix some cream cheese and zap in micro to soften and mix well.

    Pour over beans in an over-proof dish.

    Bake at 350 until bubbly, and heated thru, top with funions and brown slightly....serve and gorge.

    my dr told me to buy prilosec delayed release. does anyone have any experience taking this. thier website says the regular prilosec is gluten-free but does not say about the extende release ones.

    I would think that it's a safe bet. Richard says that very few if not all meds do not contain gluten.

    I take omeprazole (generic prilosec) without any problems.......it's a lifesaver for me. ;)

  5. A while back I had posted about being frustrated because I wasn't losing weight, but was a tad nervous because I'm breastfeeding my three month old.

    Well, I'm happy to say the weight loss has begun ! I haven't restricted calorie intake or anything - the only things I'm restricting are soy, dairy, eggs, and glutens (all are known allergens in my older son). I eat whenever I'm hungry, stop when I'm full. I've been eating things like gluten-free brownies from Bob's Red Mill. I also eat lots of fruit, and am sure to eat good meals, too. This afternoon I had last night's leftovers - grilled chicken breast, risotto, and asparagus. I love that on so many levels I feel SO much better. I have more energy than I did with my first son, despite getting up as often as every 1 1/2 hours to nurse him. I'm tired of course, but not falling asleep at the wheel like before. I'm eating pretty much what I want and have lost 11 lbs - I'm just 4 pounds shy of where I was when we got married.

    Feeling better is all the reason I need to maintain the changes I've made. Losing weight is a bonus. Another thing I noticed is I had acne before changing how I ate. It was kind of subtle, but still there. That's cleared up a lot and seems to be continuing to get better - in fact it's almost totally gone. My hypoglycemia seems to pretty much be gone. My rings are too big now, for the first time in a few years.

    The only complaint I have is I recently bought a bunch of clothes that I really like - and pretty soon they're going to be too big ! :lol:

    New clothes, not that's a reward :lol:

  6. I just caught the segment. It featured Vanessa Malton, author of "Beyond Rice Cakes". She made a couple of gluten free appetizers, and gave the "famous" 3-ingredient peanut butter cookie recipe! She's a Celiac, herself--suffering from migranes for years.

    Heidi Collins introduced the segment, mentioning again that she had the disease. :)

  7. Yes, it could be possible that you have Celiac Disease. You have listed several sympton, although celiac disease can have as many as 200 symptoms.

    As you doctor to run a full panel of tests for Celiac. But if you want to be tested you must continue eating gluten or your test will be inaccurate.

    I you want to begin the diet, you need to go back to the basics:

    Chicken, rice, potatos, steamed veggie, seafood. Use little seasonings, just salt and pepper. Eat very simply.

    You also need to check your shampoos, lotions, toothpaste, lipstick. (anything that can get into your mouth)

    You have been sick for so long, it will take some time to feel better. If you have positive response from this diet, you have your answers.

    Others will post and offer more information. Keep reading here. It the best source of information available.

  8. Thanks! Please forgive my ignorance on this. Could you give me a brand? Is Kingsford OK, for instance? We live in a small community and may not have as many choices. My son is concerned that all mainstream charcoal IS briquets. Any idea what mainstream store sells the wood charcoal?? WalMart? Target?

    You need to start a new post and tell your story, sort of like you website.

    Tell us about the guy and girls out there.

    I thank you for addressing me, but it's lost on people who don't understand how you wrote me back.

    Start a new post about the guys and girls in blue, green, kacky and camouflage. (miss anything?). Keep us up on what you can share and what it's like for you and what it all means. We all have out troops in our heart daily as we watch the evening new.

    This would be a good thing.

  11. Some of this may be glutened related, many other may be "change" related issues. My peri-med symptoms lasted a good 10 years until the big "P" was gone and done with.

    But......I still have strange perspiring when I am eating foods. I have not narrowed it down to anything specific and don't know even whether it is gluten related. I have no other "gluttened" symptoms to accompany the perspiring.

    If anyone finds a connection, please let me know. :)

    Would you accept my opinion?

    When I first started this diet 15 months ago, I was totally at a loss and no where to turn. I did some web research and thank goodness I found these good people here. I even have reserved seating. :P .

    I joined the Celiac/Sprue Association and received their list of gluten free products. In retrospect, I found it very conservative and directed to large city chain stores...small town girl, I am.

    You need to know that many manufactures often change their ingredients to improve their products all the time. In other words, if a product was gluten free in 2004, or 2005....may not be current if you are going by a list that is two or even one year old.

    I would suggest that the better way to find your way through a gluten free life, is a crash course in label reading. It may sound overwhelming in the beginning, but it's the kind of thing that one day, you just GET IT. No gadgets and whatever.

    And, please always remember that if you have a quick question for a product, we are here. Most products have a web site that you can e-mail and I have found that most respond quickly and very informative. Many here have posted responses and compile a notebook. (but again ingredients change).

    I hope that this was helpful in your decision.

  13. peanut butter and carrots

    cottage cheese with pineapple or canned peaches

    rice cakes with PB& J.

    cream cheese mixed with devils ham spread-with celery or carrots (Underwood's)

    Boars Head ham and swiss roll-ups, with shredded lettuce and mayo inside. - good

    Egg Salad on Lettuce leaf- or deviled eggs.

    Nuts

    ...........and the best, Poppycock!

    the top list appeared all tooo healthy, had to through in some "good" junk food. :P
