I would suggest that you go to the dr.office and get a full blood work up. I was deficient in lots of things, including B-12 and folic acid. It does not cost alot and it is a base line test to show improvement in the future.

Breakfast: eggs, Jimmy Dean Sausage/Oscar Meyer Bacon. OR leftovers from dinner or Amys Indian (Yum)
Lunch: Leftovers, Rice Cake w/PB&J, cottage cheese with pineapple, Peanuts & V-8, trail mix with raisans, peanuts & MM's
Dinner: Baked Chicken w/salt& pepper, roasted carrotts and potatoes, Gravey with cornstarch.
Taco's
Smoked Salmon on the grill, w/ brown rice, asparagy
Steak & B. Potato w/salad
Beef Stew w/Lipton Onion Dry Soup Mix - carrots & pot.
Spiced Shrimp w/Old Bay Seasoning - corn on cob.
Hamburgers w/ bushes baked beans (doctored up)
Chicken Salad - Potato Salad
Merinaded Pea salad (very good) ask and I'll pass it on.
Merinaded Flank Steak - diddo
Ribs of Grill - McKormicks dry rub - Roasted veggies.
See, gluten free need not hinder our taste buds. Enjoy

As mentions on a privious thread, special dietary foods can be tax deduced. You much keep very accurate records of this, as it may send up a red-flag to the IRS. Travel to specialty stores, and the difference in gluten bread and non-gluten bread, etc.
I don't, don't want to invite the IRS into my life any more than it already does.

Went to the store yesterday and read the lable for Dorrito's - with new labeling it says it contains wheat. Just thought I would pass that on for all the new ones here on the forum

Your post indicated that it was a January inquiry. I am assuming that you have found a doctor by now. I am sorry that I did not respond to you post as I have just read it today. I would suggest researching the Charlotte medical community for doctors with specific areas of study. You are livin in a very up and comming community and I am sure that their are highly qualified gastro dr. where you are.
Jen, do me a wonderful favor and see where we can eat in Greenville gluten free. I go there alot to shop.
Maybe we can "do lunch some day" gluten-free

This may be helpful. I always have cooked brown rice in the refrigerator at all times. It is good with eggs and jimmy dean sausage, mexican food, breakfast, rice with beans and canned corn, stir fry, rice pudding (rice, cream, brown sugar, raisans) Salads with gluten-free dressing, fresh veggies, fruit, peanut butter with an apple. carotts with peanut butter, yoplait with homemade granola......
There are lots of options out there that a teenage could handle. Hope this is a start. Others will post.

With celiac desease relatively unknown by most PF, you are the lucky one. To live a whole 21 years gluten free, you have it made. I myself 51, have not missed the foods that contain gluten. My challenge is eating out and not that it is your interest, lipstick and stuff.
You seem wonderfully happy. But....my bet is the you are ADHD? Am I correct? ADHD can attribute to your ticks.
Again welcome to the forum and would also welcome your ways of living in a gluten filled life.

I have "tried" to be gluten free for six months and I still have symptoms. I am very concerned about venturing too far out of town and plan my ventures where I know there is a bathroom close by.
It take quite a long time to heal. Even though you have stared on the gluten free diet, your intestines need a great deal of time to heal because of the damage done to the villi. Make sure that you are taking vitamines that are gluten free. If you have fatique that most of us have had a B-12 injection would be a good thing. Better yet, a full blood panel would be helpful to know where your difficencies (sp?). A body out of wack can do strange things to you. I would suggest that, if you have not already done so.
Also have you check your shampoos, soap, creams that can get into your mouth.?
I expect that my recovery will take about a year. I am learning and will learn more and as I learn more, I will heal more, with the help of my friends here.

AP picked up the story. I saw it on the noon news on a station in Norfolk, VA. They talked about McD's releasing information about ingredences in their fries such as wheat and dairly, which is potentially harmful to people with those intollerances.

You don't need to spend oodles of money on gluten free foods. Please go to the recipie's section on this site.
Eating fresh has always been a good avenue. If you need help with seasoning....let me know. Nothing much has changed in my life as for eating -- just a different approach. Once you get the hang of it, it's pretty easy. Believe it or not. Happy eating.

I have been gluten free over six months and I still have loose stools in the afternoon. It will take quite a bit of time for your body to heal itself. Keep on plugging away, it will get better.

I have not had children with celiac disease so I am not your best to answer you question, but there are many here who will help you with your questions.
I believe that as long as his symptoms, which you have described as present continue, if celiac, the biopsy will indicate celiac. The biospsy is considered the gold standard to testing for Celiac Disease.
I am distressed for you as a fellow mother, that we have to inflict things upon our children that make them ill to know how to cure them. I know that this has been very difficult for you and I am sorry.
I wish you well as Celiac Disease is totally controlled with a gluten free diet. You child is young and would never know what gluten is as he grows up. Challenges will face him when they socialize. Hope this is helpful to you.

I browed through this thread so if I miss something, please excuse me.
Since going gluten-free, my body does not crave red meat. Only on a few of the the occations that I have indulded it, I was not feeling the need to consume very much. I eat alot of seafood and too many carb based foods.
I think that you have to listen to your body and your body craves certain things, and it will tell you.
Beef to me seems hard to digest. I am a firm believer, that your body tells you what it needs, with help from good balanced diet.

You are definitely not the only Canadian here. We have it covered from West coast to the East coast and in between. Where are you ?
There is lots of good info here, although I must admit I am jealous of the Americans for all the food choices they can get.
I live in North Carolina, USA. But I know how sassy you Canadians can be. Especially when it gets dark early and mints are the only source of entertainment....har,har,har.

I have taken alot of my daily life reading about french fries. I am not better informed and sorry to say I will be cooking my fries at home. I don't think that I have ever reacted to them, but yet, I am still trying to see what I have been reacting too. So that matter has an opened end to me.
I just wanted to point out, that with the new labeling law, McD's may be the first, but it will not be the last. I think we should save our huffs and blows until the whole thing plays out. There is more comming, I can assure you.
Let's take some time, digest it all and react where it is needed. Times are changing quickly. Arm chair a little, watch and listen.....then we can pull out the power of the people.

First off, I don't think we're planning a class-action lawsuit, and neither are we are we "counting our money or planning to bankrupt McDonalds". I don't, however, think that it should be O.K. with ANYONE that when you go to a fast food restaurant you're taking a big chance with either your health or the health of your children. I think that McDonalds has vascillated with regard to its ingredients listing on several occasions, and somewhere, somehow -- even if it's through monitoring through the FDA -- they should be held accountable. As far as following the letter of the law -- what about following the spirit of the law as well?
Everything in life isn't as black and white as your posts make them appear. This one is right. That one is wrong. That one is rediculous. These are parents who are very concerned about the health of their children, and rightly so. They are trying to give them as "normal" a childhood as possible under circumstances which are less than optimal. 99.9% of kids go to McDonalds. It's just the way it is. These parents want to make sure that if and when their children get to go, they are medically safe.
Hysteria? You bet. Until you've held a very sick child in your arms in the ER, wondering what to do and feeling absolutely helpless about it , you haven't hit the tip of the iceberg of worry -- under those circumstances, however, it's just controlled hysteria.

With a little reservation, I would like to say that I grew up across the street from her and I am still in contact with her family.
I can get information to her. Please keep in mind that she is in the business of finance with her position, but she could certainly direct our interest to writers that could help us in our publicity issues.

Can we brain storm and find a way to get Time Mag. to do an article, yes. I am not the same person I was before Celiac. I was alway proud of the way I spoke and wrote, it's not the same now.
Several, well worded letter mailed to Ann would get her attention and I could write a cover letter asking for reseach from her team to reseach Celiac Disease.
If we can get a packet together, I will send it off to her.

This thread really frightens me. My hands and arms shake every day. Some times it's hard to type and my hands are all over the keyboard. I do not think it is celicac issue but related but a buy product of... Please help me find the related............. This truely frightens me. I will expand later.
If anyone knows the answer, please let me know. I am thinking of an MRI. Scared!!.
