  1. Ian - I think that's the best response I've ever heard. I'm a Christian, but I'm also a realist. Some Christians forget that if God created EVERYTHING, He created common sense and science too. This reminds me of my favorite story about God -- There was a man who was in the middle of a flood, and the storm was still raging all around...
  2. Thanks for sharing such a wonderful experience. I got all teared up.... (Sniff...) Nancy
  3. Amen! I've found that most of my gluten symptoms are neuro/psych, with some stomach problems. I think that once all is said and done when it comes to researching gluten-related disorders, that they will find that it's a group of conditions rather than celiac vs non-celiac.
  4. I'm going to say it yet again on this thread -- TWIZZLERS?!?!!???!?!?!?!???? Why, for the love of all that is holy would they do that? Cornstarch people! Cornstarch! Cornstarch will keep things from sticking too! And Pancake batter in the freaking omellettes? AAAAAAAAAAAAAAAAAAAAAAAAAAAAA!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!...
  5. Tinkyada pasta!!! Buy a few packages if you're a pasta lover. Ener-G Wheat Free Crackers - (they're also gluten free). Comes in a little tiny box about the size of a box of poptarts. These have been a life-saver for me. I've never been much of a bread person, but I didn't know how I was going to handle not having crackers. These are great. They...
  6. I'm so sorry you and your daughter have been having such a rough time. How old is she? I don't know anything about feeding tubes or anything, but I'll help as much as I can. I have heard that some people's reactions to gluten are delayed, so it very well may be the gluten. Some people react very badly to dairy too, so maybe the yogurt? Since the...
  7. I was wondering about this a while back myself. I found that Disney World does a great job at providing for gluten-free dining. Here's the search page on the Disney World official webpage. Open Original Shared Link They also will accomodate the kids if you want to do one of those Character Dining things where they get to have breakfast with Cinderella...
  8. LOL! I totally would have licked my kids!!!! And my husband, and myself too. I was thinking about that when I read that page too! Nancy
  9. Well, I can help you with advice on how to deal with days when you can barely do anything. I had really bad back problems, a newborn, a 19-month-old and no help. I had to think outside the box to just get through the day most of the time. For the first couple of months, the baby can't even roll over, so if you have to get to the bathroom, you can just...
  10. I'm glad you asked about this. I was wondering about the wasabi paste myself. Good to know. Now all I have to do is bring my own soy sauce and I'm good too. =) Nancy
  11. I agree. Going on the gluten-free diet may make a difference, even though the tests were non-positive. Celiac is difficult to diagnose, even with biopsy because the damage is very patchy. Since the damage is microscopic, doctors can't see it when they do the endoscopy, they don't really know where there might be damage. So it's very easy to miss damage...
  12. I say go over his head until you find someone who listens to you. Go to the owner of the company if you have to. If they won't listen to you even at that level, maybe ask your diagnosing doctor to call them and read them the riot act. If they still won't correct the situation, call the media. There is one TV station in my area that has a consumer reports...
  13. If I were you I'd think about what local restaurant has the friendliest staff (friendly staff usually means there's a friendly boss), and just call and talk to the manager/owner about it. Ask them if right then is a good time to talk to them, or if you can make an appt to come down to the restaurant or call at a certain time. Restaurants are usually controlled...
  14. How cool! I love it when stuff like that happens! Nancy
  15. I agree with everybody. Go for it! Even if you don't want to go the "world famous chef" route, you could offer your services occasionally as a celiac educator for the kitchen staffs of local restaurants. You could set up one day a month or whatever where you would arrange for a restaurant to gather their staff for a brief class on celiac. You can...
  16. I was thinking about the cultural/traditional aspect of this too. I know anyone in my family of my grandparent's generation, and many people of my parent's generation on both side of my family are "old school" too, and see illness or anything as a sign of weakness. My FIL won't go to the doctor because "all they're out for is money", and won't do anything...
  17. I got this too! I wish I could go to the seminar. He sounds like such a nice man. If anyone can make it you'll have to give us a full report when you get back. Nancy
  18. You have to do it so that you can be around for your kids. I just recently found out that I have two copies of DQ1, which a gluten sensitivity gene. The only way I can have two copies is that both of my parents had to have had it. My mom died of breast cancer 12 years ago when I was 23. She was 46. My dad died of stomach cancer last year. He...
  19. I really agree that the best thing you can do is get out on your own as soon as possible. I know though that sometimes things are more complicated than that. Maybe if you let us know a little more about the employment situation in your area or the type of industry or job market there is, we can give you some helpful hints. For example, if you're wanting...
  20. That's unspeakably awful. It's abusive. I can't even imagine. My heart really goes out to you. Sometimes people, even family, are just cruel and mean people. It's hard to break away from people like that, especially since it sounds like you're in a small community, and any real distancing would have to be by quite a distance. Just know that it...
  21. YAY! I never thought of the pipe cleaner or running it empty. That should do the trick. With all the recipes I'm finding, I'm relieved that nobody has had problems with this. I can't imagine trying all those bread recipes and doing it by hand. My stand mixer is going to get a lot of miles on it this year... (Maybe I'll ask Santa for a bread machine...
  22. That's a great idea! Nancy
  23. Hi Dani, I do two packets a day for a month (one whole box). Then months or sometimes close to a year will go by without having problems. I can tell when I get candida problems. It's kind of like how you can tell if you get gluten. Once the candida is under control, you'll know the symptoms you have with it when they come back. And candida is...
  24. You could also explore the possibility of food intolerances in general. A lot of us here don't actually have celiac, but have found through taking gluten out of our diets that gluten causes serious problems, even though we don't have the intestinal damage that = celiac. Personally, if I eat gluten, I get horrible headaches, nausea, stomach cramps, ...
  25. A-ha! I get that upper right abdominal thing sometimes. Makes sense. Nancy
