  1. So this is my bloated tummy. This was day 1 of gluten ingestion. Normally have a flat stomach. This is what people don't see or realize when people like us get glutened. I wish all the people that thought it was OK to cheat would see this and the DH and the hours spent in bed not to mention the hours on the toilet.
  2. Yes - 2 pieces of bread for 3 weeks is what the GI specialist told me during my consult appointment. I would try to consult with the doctor before your endoscopy procedure so you are clear on what he is doing to you. I made sure that my doctor knows to take 6 biopsy samples as some do less and can miss the atrophy/damage.
  3. I cannot believe all the little symptoms I had already forgotten about that have popped up. Itchy scalp, insomnia, brain fog, lethargy all back. I had my cramps/diarrhea this morning about 7 am - finally hit me from Monday at 10pm ingestion of the bread. And so it begins...
  4. Thanks Colleen! I am starting to get that rumbling gut and definitely getting fatigued. I forgot how exhausted I felt before. I had hoped to get into the gym tonight but I may not make it. Also have been feeling like I am starving even though I've eaten a good amount of food today (not the bread yet though)
  5. It was a delayed reaction by about 24-36 hours. I ate my bread at 10pm last night and I have not had any D yet. I've only had slight nausea and bloating. No rumblings of the gut yet or diarrhea. In fact - I had a semi-normal stool this morning. I have been eating really really clean (meaning whole foods only- brown rice, lean meat, veggies) the past few days...

  7. Are you symptomatic? Have they ran serology to test your antibodies? Have you had proper follow up after diagnosis?
  8. My boyfriend tried to put a positive spin on it and said we can now have a proper goodbye to all my favorite meals and restaurants in this 3 week time. I guess that is one way to look at it.
  9. Well - I finally had my specialist consult today. My GI doc is very knowledgable and for that I am grateful. He wants me to do a gluten challenge for 3 weeks prior to my endoscopy. Having been gluten-free for over a month now I am a bit scared to go back to eating gluten again. But I will do what I need to do to get a proper diagnosis and to see what damage...
  10. No - it is very firm. They said it could be a cyst or abscess but I have a pending CBC, chemistry, and they did an ultrasound yesterday so I will hopefully know what it is Monday. I hate waiting. I don't think it is related to the Celiacs but it is alarming none the less. I feel like a monster with this thing on my face!

  12. I've heard people use cauliflower and break it down in the food processor to make it a cous-cous texture. I've never tried it though.. I think you can google the cauliflower cous-cous and there are tons of recipes.
  13. Cook in massive batches on the weekend and then individually portion them for the week. I do that so it makes grab n go very easy. I don't have to fall of track on my diet and i have all that I need. I typically do a protein and veggie with maybe a starch (rice or potatoes). Then I hardboil eggs and make hummus and take a handful of nuts and a piece of fruit...
  14. Going back in because lump is making it painful to swallow and move my head from side to side and up and down. Has really enlarged and changed the silhouette of my jawline! Crossing fingers.
  15. I'm pretty certain I have had a nervous breakdown!
  16. Went to the doctor to figure out the painful swollen lump under the chin. Told me it should subside in 2 weeks and if not to return for follow up and possible ultrasound. Potential swollen lymph node or salivary gland.

    It's great to hear that you are getting your energy back Matt! Before diagnosis last month I worked out religiously 4-5x/week for 2 hours. I would lift weights and do 20 minutes of high intensity interval cardio. Now that I am gluten-free I have been super lethargic so I cut out the cardio and only lift weights. I know I got glutened via Jose Cuervo margarita mixer during my camping trip several weeks ago (I'm 99% sure anyway as they do not list it as gluten-free on their website, whereas other items are listed gluten-free). But other than that one incident I cannot see how I could be getting glutened. I am not saying it is impossible. But I have been going through...
  19. I take it very seriously. I'm still new and learning but I definitely avoid gluten, make my own meals and read labels. My boyfriend also let me make the house gluten-free and he is gluten-free when at home. He brushes his teeth when he comes home from work and we are all good.   20. I washed my kitchen aid mixer really well. If you are handy with tools you can take a few pieces off and clean underneath. Like the metal band. I would die if I lost my baby blue KA mixer.
  21. So I have noticed that I have a few swollen lymph nodes popping up on my body. First I noticed my inguinal lymph node and then I noticed a lingual lymph node. Have others had this phenomena? Does it go away? I found this AFTER a gluten-free diet change... I feel like I am having more symptoms now than pre-diagnosis. Is this normal after going on a gluten...
  22. Hi All, Wondering which brand of joint supplement that had all 3 mentioned in the header that you like? I see some that have caramel coloring and "natural vanilla flavor" listed in ingredient (GNC brand)... Doesn't seem like a safe option. Any better options out there?
  23. In our vet clinic we use cold water and then mix hydrogen peroxide - however it can bleach so be careful. We don't really worry much about bleach stains though - you may.
