Have a good time! I'll be looking forward to the update

Hi Evie--I found I was sensitive to rice a few months after I went gluten-free. Since it's an intolerance, and not a true allergy (I had skin testing earlier this year), maybe sometime in the future, when my intestine is completely healed, I'll try it again. I don't bake much these days, the only starch I seem to tolerate is potato starch. I am thinking...

ARCHIVED Obscure Noises, Burning
jerseyangel replied to Lister's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'll take a stab at this --I think a lot of us get stomach noises. Trapped gas, healing intestinal tract, all the stuff we have going on in there. I get the burning now only when I eat something acid--like orange juice. I have not eaten yet this morning, and I'm having some abdominal noise right now--not sure why. Maybe I'm just hungry. We are also... -
ARCHIVED Omg...i Might Be On To Something
jerseyangel replied to Rachel--24's topic in Food Intolerance & Leaky Gut
Thank goodness! I don't know mine either, and I thought I must be the only one! Especially after all the blood testing I've had the past couple of years -
I agree that a note and maybe a print out of gluten ingredients would be a good idea. I had to do a double-take at this post, though!

Floridian, This happened to Armetta a while ago--because of that experience, she is deathly afraid to go back into the hospital. She was supposed to see her doctor today, and I don't think anyone's heard yet what happened. It does sound bad, and I'm worried, also. If I do hear anything, I'll be sure to post. Praying here for better news. -
It's true that stir fries are better cooked on med high to high heat (in a metal wok, high is better) but olive oil is not a good oil to do this with. It will smoke at the high temp. Peanut oil is really good for stir frying--it can be heated to a high temp and not smoke. Don't want to scare the kitties!

Andrea--Thank you so much--how nice of you! I pay $7.93 per carton (there is a discount for ordering off the site). Off the top of my head, I think the shipping was around $7 (for 3 cartons)--ballpark. Probably is a wash because of the on-line discount. I appreciate the thought, though My son (21) is an old car nut, and has two that he is restoring... -
ARCHIVED A Kinder, Gentler Iron Supplement?
jerseyangel replied to penguin's topic in Coping with Celiac Disease
Chelse--I get the same side effect as you do from iron suppliments! I, too, hoped for the C and got the awful, black D. (The stuff I share on here !) I agree completely on the calfs--I don't eat veal or liver of any kind--why eat what the body has already filtered out The bruises you describe--I had them for years. Especially on the upper legs... -

I have so many sensitivities that when I found this (thanks to someone here on the board) I was so excited. I bought one carton, tried it, and was fine. The only downside to it is that it is not available any place locally here--the woman there checked for me--so I have to order it. Since it's really the only specialty food I use, it's worth it for me... -

Donna--I use Vance's Dari Free as a milk sub. It tastes pretty good, has a good texture and makes a nice ice cream! I think it would taste good in Carnation Instant. If you haven't seen it, here's a link-- Open Original Shared Link It does have a lot of ingredients , but I tolerate it well . -
ARCHIVED Diagnosis, Diet, Symptoms Etc
jerseyangel replied to AndreaB's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Andrea--My doctor never did the blood work on me , he scheduled the endo at my first appointment. He was actually thinking Celiac/gluten intolerance from my symptoms! -
ARCHIVED Fybogel
jerseyangel replied to klemmen's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi Klemmen--Sorry you feel so sick! If it were me, I would stop the fiber supplement. It is clearly not helping the situation. What is your diet like? For D, banana, cooked veggies, lean meat and poultry, applesauce, Cream of Rice are good choices to calm you system down and slow things a bit. Be sure to drink water to replace the fluids you are losing... -

ARCHIVED Diagnosis, Diet, Symptoms Etc
jerseyangel replied to AndreaB's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I had every one of the symptoms--plus a few more that weren't listed (anemia, neuropathy, anxiety). I was diagnosed thru biopsy and positive diet result. -
ARCHIVED gluten-free/dairy Free White Frosting
jerseyangel replied to ebrbetty's topic in Gluten-Free Recipes & Cooking Tips
Hi Betty --I'm not sure if this would work for you, but I make frosting with Spectrum Organic Shortening, powdered sugar, vanilla, and Vance's Dairi Free. It also works with plain water or other milk sub. To do chocolate, I add about 1/3 cup of Nestle Pure Cocoa Powder to the powdered sugar. -

Donna--Relieved to hear that your foot injury isn't serious! Great news Robbin--I am also interested in your potato kugel. Potato is the only starch I have left . Does it contain any grain? Hope everyone is having a good morning -
ARCHIVED Fading More Each Day
jerseyangel replied to Lister's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
That episode went thru my mind more than once when I was making the "doctor rounds" while trying to figure out why I was sick all the time--I would try to sneak a look at my chart, to see of there were any "personal observations" on it! They don't really do that, do they? -
Imagine broths are very good, too.

ARCHIVED Mouth Blisters
jerseyangel replied to Rachel--24's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Rachel--That sounds really good! I'm a little scared of any coconut because that Kinesiologist that I saw a couple of years ago said that I was "allergic" to coconut. He's turned out to be right on so many things that I'm not going to experiment with coconut anymore. It's too bad, because it sounds delicious. Maybe that's also the reason I don't do well... -
That was such a sweet thing to say! I feel the same--when I got very sick, I felt the best thing at the time was to quit my job--a job that I thoroughly enjoyed. It was working at the high school here in town, so there was a definate social aspect to it. Finding this board has first and foremost taught me everything I know about Celiac Disease, but also...

Hey Lister--great to hear you had a nice birthday! I can't wait to see your new kittens--I love orange tabbies! I've never had one, but I think they're beautiful. I always regretted not getting on of my cat's brothers or sisters when we got him. That's a good idea. Here is Carriefaith's recipe thread--she has lots of stir-fry ideas-- Open Original...

ARCHIVED A Kinder, Gentler Iron Supplement?
jerseyangel replied to penguin's topic in Coping with Celiac Disease
Then I think the baby vitamins are a good place to start. Of course, take them with food--at dinner. That way, you won't feel crappy all day. Not being a medical professional, I would say your levels are kinda bad. The ferritin at 4 is an indication of how much iron you have stored in your body. Did you have this blood drawn after you went on your gluten... -
ARCHIVED A Kinder, Gentler Iron Supplement?
jerseyangel replied to penguin's topic in Coping with Celiac Disease
I don't have a lot of luck with iron suppliments. They are very hard on my stomach. Before I was diagnosed, my hemiglobin was at 8. My doctor told me to take a suppliment, and I first tried Enzymatic Therapy--it made me terribly sick. I then tried Slow Fe--it was better, and I stuck with it for a while, but stopped because of the nausea. I deceided,...
